Hi! Welcome to my channel!
Добро пожаловать and Ловден!
I wanna show you one of my amazing creations today.
I didn't obviously design this, but I wanted to kind
of create something which was doable and easy to follow.
So I made these pear shaped cakes.
You can use any molds that you have
and they're gonna have this caramelized pear inside,
the cinnamon, cinnamon sponge
and kind of like ice cream flavor vanilla sort of mousse.
they taste so good very very pretty as well to eat
and I wanted to resemble a pear so I used
different sort of colors of velour
so yeah I really hope you try this recipe and enjoy it
first we're going to make our sponge cake
so in a large bowl add your butter together with sugar
and you're going to whisk this on high speed
for a few minutes until the mixture is smooth
and incorporated. Then you're going to add your eggs
and slowly mix everything together one more
time. Now you want to add vanilla extract
and mix everything together again. Make sure you scrap the
sides of the bowl too. Then add your plain flour
and mix everything together on a low speed until
the mixture is incorporated.
You then might want to switch to a spatula and mix everything one more
time as you don't want to over mix the mixture.
I'm using a baking pan lined with some paper
and I'm adding my cake mixture inside.
You do want to spread it around to make sure it cooks
nice and even and your cake is nice and even from all the sides.
Then we're going to bake this for
about 25 to 35 minutes at 180 degrees celsius or 350 fahrenheit.
The cake will be done when you
can smell it and see it you can
also test with the toothpick you want to
place this onto a cooling rack
and leave it for about 10 to 20 minutes take off
the baking paper it should come off nice
and easy and when the cake has
completely cooled down we're gonna actually cut out
these beautiful shapes
I'm using a cookie ring as my pears
are gonna sit on top of this cake so
whatever shape you're gonna use make sure you use
the right cooking ring and
it's gonna look just like this guys
and girls I have my recipe on my website at
alizyummyfood.com you'll find full ingredients
and also directions on how
to make this and also you'll be able
to find loads of other recipes that I do
for my channel and just click through click
on a picture and you'll be able to
see the whole video with the directions
and the full recipe in English and
Russian languages now we're gonna make
our pear chocolate caramel inserts I'm
using this mold here which I've just got on Amazon
so do check it out it's
perfect if you're making these fancy desserts and I also do my online
cooking courses on fancy cakes so if you're interested I will explain
everything there and tell you where to find anything
and everything so I've
added some chocolate
and I'm just dipping it through turning it around and
getting rid of any excess
and then we're gonna place this into the freezer for
about 10 minutes to freeze up for this
recipe you're only gonna need one pear
as these cakes are very very small you want to cut
and peel your pear and chop
it up into nice bite-sized pieces
so you don't want very big chunks but you also
don't want very small pieces
as when they cook they will become softer so you
definitely want that crunchy texture in the dessert.
I really love pears in desserts they
just add so much flavor and it's perfect.
So once that's done you want to add a bit of butter into
your pan and then we're going to add our chopped pears,
a bit of cinnamon. I like to use a lot of
cinnamon because it really really adds to the flavor.
You want to mix everything together and
cook this for about five to ten minutes until
your pears start to kind of brown and caramelize.
set them aside leave them to cool down for a few minutes
and add your salted
caramel inside I'm using
my homemade salted caramel you can find the recipe
on my website but you can also use store-bought mix everything together
until you get nice
and beautiful color just like this and by this time our
molds or chocolate molds have set you want
to use about one teaspoon of the
pear mixture into each mold and make sure you divide them evenly.
You want to make sure there
is enough caramel and enough pears into each single section.
You go around until it's all
finished and done and then we're going to place
this back into the freezer for it to completely
set. This might take several hours
so if you do want to make this process easier do this the night
before so you're not worried about them setting once
your caramel inserts have been set we're
gonna make our mousse so place gelatin leaf into cold water
and set it aside to bloom and then in
a pan add your milk i'm using full fat milk orange
zest mix everything together and then place it
onto the stove and cook this for about five minutes
or so you will see when the mixture
starts to kind of go up and puff up that's the time it's done.
Once it started boiling you want
to take it off the heat and then add
this into your white chocolate mixture. Leave this for a few
minutes and then add your bloomed gelatin
and then mix everything together until the mixture becomes
nice and smooth. In a pot add your heavy or double cream
and you want to whisk this for a few minutes
until the mixture thickens up but it's not too thick.
You kind of want to look for a sour cream
consistency so it kind of falls off the spoon
but hasn't whipped up completely. Now you want to add
your double or heavy cream inside a little bit at a time.
Mix everything together and then keep
adding until you've finished with your cream.
You want to do this slowly so the mixture incorporates
together with your milk mixture.
This really really tastes like vanilla ice cream. I'm not
even lying this is amazing place the mixture
into a piping bag i do recommend using a piping bag so
it's easier to spread
and place into your molds otherwise it will go everywhere and then when
that's done you want to set this aside take
your mold i'm using this shape because it's resembles
like a pear place this onto a wooden board
so it's easier to put back in a freezer when that
once they're filled and then go around
and add your mixture into each sort of silicon mold and
you do want to add around two-thirds of your mousse
then we're gonna set this aside into the
freezer for five minutes
while we make our pear inserts they should be really easy to make you
just take them out from the mold and kind
of glue two halves together press down and it's done then
place your little balls of heaven into each mousse cake
and then top it up with
more mousse and then place this into the freezer overnight
or minimum 8 hours
once they're ready you want to take them out
of your molds make sure they're nice
and done and I'm using a velvet spray
to decorate the cakes I do my online
classes where you can learn how
to do this and use the velvet spray at home
and you can learn loads of other techniques so do check it out on my
website and then you want to take
a toothpick place it into your dessert and
onto your cake once it has defrosted
a little bit you can take the toothpick
out and decorate your pear cakes
with a little sort of chocolate shaving to give
it a nice look like a pear
and there we go guys they look incredible and I
I wouldn't be able to tell if these are real or no real pears.
I think the colours really match the reality
and when you cut into each cake you will see
the middle, you can see the delicious vanilla cinnamon sponge,
the delicious vanilla mousse
and then you've got your caramelised pears with chocolate.
It's really really delicious, absolutely incredible.
I hope you try this recipe guys,
thank you so much for watching and I will see you soon.
