This delicious silky, vegan lemon and biscoff cheesecake is so amazing. Silken tofu makes a delightfully light and creamy filling for this vegan version of cheesecake. Make it the day before serving to allow its flavors to develop. I love the crunchy and soft textures. The lemon adds the citrusy flavours, while the biscoff makes it soo crunchy and taste like caramel and cookies.

Now let's get started!
into your food processor add your lotus biscoff cookies
and we're gonna blitz them together until
they become nice and small so like crumbs
then you want to add your sugar-free syrup you can
also use maple syrup or honey this is completely up to you
and then i'm going to blitz everything
together one more time until the mixture becomes nice
and sticky and that should happen pretty
quickly within a couple of seconds
or so now the mixture will look like this you then want to
transfer it into your baking ring i'm using
a bottomless ring it's just easier for me to take
the cake out later and i'm adding my crust
to the bottom of my cake ring which is lined with some
baking paper you want to press inside gently
and just go around the entire cake you can wet your
hand if it's sticking to your um you know hand
or your glove and it will be easier to put it
throughout the mold so just make sure it's nice
and firm and you pressed it down correctly we're
then going to take this off
and we're going to preheat our oven and bake this for about
five minutes while we're prepping the filling back
in our stand mixer you're going to add
your silken tofu sugar you can also add banana tahini
or almond butter salt vanilla extract
lemon extract and I'm also going to add some lemon zest as well
and then I'm also going to
add lemon extract and lemon juice
so we really want to give it like a nice lemony flavor but
then I'm going to blitz everything together until
it's nice and smooth you can also use a blender
here too but food processor is pretty quick.
Once your mixture is nice and creamy and looking like
this I'm going to add corn flour into my milk
and mix everything together until it's nice and
smooth and becomes like a paste just like
so and then we're going to add sweetener or you can also
use maple syrup inside or honey with a cornstarch mixture
and mix it one more time again until it's
nice and smooth once everything is done you want to take it out
and pour it into your baked cookie
base it has cooled down as well for like five minutes
and once you've poured that in I also
like to crush some cookies on top just to give it a nice look as well
and I'm gonna make sure they
are inside so that we have like a little crunch inside the cake
and I'm going to bake the cake
for about 30 minutes or so this can take shorter
or longer it depends on your oven
the top should be firm but inside should be a little bit wobbly
and once the cake has chilled
in a fridge for several hours you can take out
your cheesecake from the mold gently by running
a knife around the cake and just taking it out
then place it onto your presentation dish
I also like to add a bit of whipped coconut cream,
cover all the cracks if there are any
and then add more Biscoff cookies
and then decorate the cake with more cookies inside.
This cake is so yummy, it's so creamy, tastes like cheesecake.
You have a really nice Biscoff
crunchy base with amazing lemon filling
and biscuits on top and inside. If you're a fan of
Biscoff, you're going to love this cookie butter cheesecake.
