What You Need:
1 box white cake mix,
mixed according to package
1 container frosting, any flavor
Gel food coloring (Blue, teal, yellow and pink)
For Mirror Glaze:
1 TBL plain gelatin
1/2 cup water, separated
3/4 cups sugar
1/3 cup sweetened condensed milk
1 cup white chocolate
Blue gel food coloring
Sparkly sugar
1. Preheat oven to 350 degrees. Mix a box of white cake mix according to box instructions. Divide batter by three, and die one third pink, one third teal and one third yellow.
2. Bake each third in a parchment lined cake 8 inch round for 15-20 mins or until toothpick inserted comes out clean. Allow to cool. Using a biscuit cutter, get three rounds out of each cake.
3. Dye a can of your favorite frosting blue. Ice layers of frosting between cake colors, starting with yellow, then pink then teal. Add a thin layer of "crumb coat" on these cakes. Freeze overnight.
4. To make mirror glaze: Bloom gelatin in 1/4 cup of water. In a small saucepan, add remaining water, sugar, condensed milk and bring to a simmer. Add your bloomed gelatin and stir until dissolved. Add white chocolate and turn off the heat. Stir until mixture is homogenized. If it's lumpy, hit it with a stick blender until it is smooth.
5. Once glaze hits 90-95 degrees pour carefully over the frozen cakes. Allow to set for at least an hour. Transfer to serving plate, sprinkle lightly with glitter sugar and slice.
