The chops are seared on both sides, basted with the butter, and then finished in the oven. For the sauce, I sauté the onions in the drippings and enhance them with honey, dark balsamic vinegar, and Dijon mustard. Served with rosemary and garlic potato wedges.

📋 INGREDIENTS for 4 servings

For the pork chops:
• 4 bone-in pork chops, 250 g (8.8 oz) each
• 2 tbsp olive oil
• 30 g (1.1 oz) butter
• 3 cloves garlic, crushed
• 2 sprigs rosemary
• Salt

For the caramelized onions and sauce:
• 4 onions
• Drippings from the chops
• 2 tbsp honey
• 1 tbsp dark balsamic vinegar
• Vegetable broth as needed
• 1 tsp Dijon mustard
• Freshly ground black pepper

For the rosemary potatoes:
• 900 g (31.7 oz) potatoes
• 3 tbsp olive oil
• 3 cloves garlic, crushed
• 3 whole cloves of garlic
• 2 sprigs rosemary
• Salt and black pepper
