🥒 Ingredients

3 eggplants
Oil for frying
1 clove of garlic
300 g tomato sauce
Oregano
Capers
Olives
Fresh basil
Salt
Olive oil

👩‍🍳 Instructions

Cut the eggplants into bite-sized cubes.

Heat plenty of vegetable oil in a deep pan and fry the eggplant cubes in batches until they are golden brown and tender. Transfer them to a plate lined with paper towels to remove any excess oil.

In a separate pan, heat a drizzle of olive oil and sauté 1 clove of garlic over medium heat until fragrant.

Pour in the tomato sauce, season with salt and oregano, and let the sauce simmer for about 10 minutes, stirring occasionally.

Add the fried eggplants to the pan and gently stir until they are evenly coated with the tomato sauce.

Finally, add the capers, olives, and fresh basil, then cook for another 2–3 minutes to allow all the flavors to blend together.

Wash and cut the eggplants into bite-sized cubes.
Heat a generous drizzle of extra virgin olive oil in a large frying pan.
Pan-fry the eggplant until golden brown on the outside and tender on the inside.
Add the tomato sauce and stir well.
Season with oregano, capers, olives, salt, and black pepper.
Simmer over low heat for about 10–15 minutes, allowing all the flavors to blend together.
Finish with plenty of fresh basil before serving.
