This lemon rosemary chicken and asparagus is very simple and very delicious. Let's get started.
We are going to break down a whole chicken. I am breaking this down into leg quarters
so the thigh and the leg are together and then we're also going to break down the white part
so the breast and the wing are going to be together as well. You can use separate pieces
of chicken if you like but I felt like this is the best way to prepare this. Now that we have
the chicken broken down we're going to simply season this with some salt some black pepper
and of course my favorite garlic powder. The chicken is all seasoned now it's just time to
cook it. To a hot skillet you're going to add about two to three tablespoons of olive oil or
avocado oil and I am going to lay the chicken skin down in the skillet. This is going to
make that skin nice and crispy. We're not coating the chicken with anything. We're cooking it
directly in the oil with no coating. This is going to be a low carb meal. While the chicken is cooking
on medium let's prepare our asparagus. You're going to start by chopping about one inch off of
the bottom. This part is very fibrous and not really edible. We're going to remove the bottom
of the asparagus and then what I'm going to do is since these asparagus are pretty long
I am going to slice them in half. It's going to give us twice the amount of asparagus
and it's just going to make them easier to eat. We're going to cut these in half and then after
that I am going to wash them all off to make sure they're all clean. At this point the chicken has
been cooking for approximately 15 minutes. It's time to flip these over so the other side can cook.
You want to cook these at a continual medium heat because we don't want them to cook too fast and
we don't want the skin to burn. After the chicken has cooked for about 15 minutes on this side
it's time to remove it and we're going to let it rest. Make sure to shake all the excess oil off
before allowing it to rest. Next we're going to remove some of the oil out of the pan. We want to
keep approximately one tablespoon of oil and remove the rest. Then to this pan we are going
to add 1 fourth cup of lemon juice. The lemon juice is going to mix with all those brown bits
and pieces that were left from the skillet and this is called flavor. We're going to add the
beautiful asparagus to the skillet and we're going to toss the asparagus around in the lemon juice
and all the goodness that was left from the chicken. It's time to season our asparagus.
We're going to season this with a little butter. I'm using two tablespoons of butter
and then we're also going to simply season it with some salt and some black pepper. Nice and simple.
We're going to add the chicken back to this skillet after the asparagus have been cooking
for about five minutes. They don't take very long to cook. We're going to add the chicken back to the
skillet. Then we are going to top each piece of chicken with just a little butter. Just a little
bit of butter and then we're going to add some rosemary to the top of the chicken. You can use
fresh rosemary. I am using dried rosemary because it has a stronger flavor. Once all your chicken
is topped with the butter and rosemary, we're going to hit it with a little more lemon juice
because we want that lemon flavor to shine through. Then we're going to put this in the oven
on broil for about five minutes and look at that. It comes out nice, crispy, golden, and delicious.
The only thing we have to do now is plate this up. I am putting four pieces of chicken on one plate.
I'm putting a full breast and wing and a leg and a thigh and I am loading it with asparagus.
This is a very low carb meal. It's packed with protein and you're going to have a nice full tummy
after eating this. We're going to arrange the asparagus and then I'm going to place the chicken
on top. It's looking really nice and pretty. Of course, I'm going to go around and clean the plate
because you eat with your eyes first. Then we are going to finish this off by hitting it with some
of the juice that was left in the pan. This juice is going to be nice and flavorful and add a great
addition to our dish. The only thing left to do is serve. Bon Appetit. Let's eat.
