Grandma's German recipe! Berry yeast pastries with vanilla cream and crispy crumble topping.
Airy rolls with delicate vanilla cream, blackberries and crispy crumble topping.
Imagine the scent of freshly baked pastries filling your home with warmth and coziness. These homemade rolls are a true baking marvel: A fluffy, feather-light yeast dough envelops a velvety vanilla cream and juicy blackberries with their pleasantly fruity acidity.
Each bite combines different textures: the incredibly soft pastry, the melting cream filling, and the delicious crunch of the golden almond crumble. The preparation is surprisingly simple and completely stress-free, while the result looks as if it came directly from a traditional German bakery. The perfect accompaniment to a cup of coffee or for a cozy afternoon with the family!
Recipe:
500-550 g wheat flour (4 cups).
2 tablespoons of sugar.
20 g fresh yeast (1 oz).
250 ml warm milk (1 cup).
1 egg + 1 egg yolk.
80 g butter (2 4/5 ounces).
5-6 g salt (1/2 teaspoon).
For the vanilla cream (pudding cream):
1 egg
1 tbsp vanilla sugar.
4 tablespoons of sugar.
30 g cornstarch (1/4 cup)
240 ml milk (1 cup)
50 g butter (≈ 3 1/2 tablespoons)
Fresh blackberries
For the crumble:
120 grams wheat flour (≈ 1 cup)
80 grams butter, cold and in pieces (≈ 6 tablespoons)
60 grams sugar (≈ 1/4 cup + 1 tablespoon)
10 g vanilla sugar (1/2 teaspoon).
Knead the dough and let it rest for 60 minutes.
Shape the rolls as shown in the video. Brush with the egg-milk mixture. Sprinkle with crumbs.
Bake at 180 °C (356 °F) for 25–30 minutes.
