📍Bamboo Shoot and Sakura Shrimp Rice
Rice…2.5 cups
Fresh bamboo shoots…180g
Boiled shungiku greens…a small amount
Sakura shrimp (dried)…2 tbsp
★Dashi
Sakura shrimp…4 tbsp
Kelp…5 cm
Water…500 ml
★Seasoning
Soy sauce…1.5 tbsp
Sake…2 tbsp
Mirin…1 tbsp
Salt…1/3 tsp
📝 Warm the kombu and sakura shrimp to make dashi. Season 2.5 cups of rice with light soy sauce, sake, mirin, and salt. Add the blanched bamboo shoots, chrysanthemum greens stems, and dry-roasted sakura shrimp, then cook. Finally, mix in the chrysanthemum greens leaves. 🌸🍚

📍Pork Belly-Wrapped Asparagus (Serves 2–3)
Asparagus…6 spears
Thinly sliced pork belly…10 slices or more
Flour…a light dusting
Finishing Sauce
Soy sauce…1 tbsp
Mirin…1 tbsp
Sake…1 tbsp
Sugar…1 tsp
Butter…5g
📝 Peel the ends of the asparagus, wrap them in pork belly, lightly dust with flour, and pan-fry. Brown the ends first, then coat with a mixture of soy sauce, mirin, sake, and a small amount of sugar. Finally, add a pat of butter to create a fragrant, complex flavor 🥓

Sugar…4 tbsp
Unsalted butter…1 tbsp (15g)
★Cake Batter
Cake flour…220g
Baking powder…2 tsp
Salt…a pinch
Sugar…100g
Milk…240ml
Vegetable oil…80ml
Vanilla extract…1 tsp
Vinegar…1 tbsp
Orange zest…from 1 orange (blanched in boiling water)
📝 Thinly slice the orange and arrange it in the pan, then sprinkle with sugar and butter. Mix the cake flour, sugar, oil, milk, and orange zest, pour the batter over the fruit, and bake at 180°C for 35 minutes.🍊 If you want to add more sweetness, brush the cake with orange syrup (made by reducing 1 part orange juice to 1 part sugar) after baking. This will mellow the bitterness and give the cake a moist texture.✨
