Freshwater Fishes: Fresh Flavors from Streams in Yunnan Mountains【Diān xī xiǎo gē】

Yunnan does not have a sea, but it is home to numerous high mountain streams and lakes. Local cuisine in Yunnan features freshwater fishes with unique local styles and ethnic characteristics. Fish, shrimp and crab in Yunnan are always special and tasty to enjoy. Rainbow trout that can be eaten raw, grilled tilapia, ice fish caught once a year, and Kanglang fish, one of the four famous fishes, are all tasty dishes on the table! Before the Chinese New Year, we eat fish in hopes of prosperity and a carefree year ahead, just like the fish swimming freely.
