In this video, I'll show you two tried-and-true smetannik recipes: eggless and the classic version. Choose the one you like best!
📌 Recipe 1 (eggless)
Recipe 1:
Capacity of the glass: 250 ml.
Step 1: (Dough)
Sour cream - 200 g (less than a full cup)
Sugar - 100 - 120 g (1/2 cup)
Flour - 320 - 350 g (2 - 2.2 cups)
Baking powder - 1 tsp
Step 2: (Cream)
Sour cream - 600 g (2.5 cups)
Sugar/powdered sugar - 80 - 90 g (0.5 cup)
Bake at 180-190 C for 5 minutes
It's best to use 20-25% fat sour cream, and it's advisable to chill it first.
If the sour cream is too thin, you can weigh it through cheesecloth for 2-4 hours—the cream will be much thicker.

Step 1:
Eggs - 2 pcs.
Sugar – 1 cup (100–200 g)
Sour cream (20%) – 1 cup (200 g)
Flour – 1 cup (≈150 g)
Baking powder – 1 heaping teaspoon (8 g)
You can adjust the amount of flour slightly to achieve the desired texture. The dough should be neither thick nor runny.
Step 2:
Sour cream (20%) – 1 cup (200 g)
Powdered sugar – 2–3 tbsp (30–50 g)
Vanilla – to taste
✔️1 cup = 200 ml.
✔️Tart pan: 18–20 cm.
✔️Bake in a preheated oven at 170°C for 30–35 minutes.
