Ingredients:
Cucumbers - 3
Cherry tomatoes - 150 g
Red onion - 1
Red bell pepper - 1
Yellow bell pepper - 1
Canned chickpeas - 200 g
Olives - 1/2 cup
Feta cheese - to taste
Lettuce leaves
Juice of 1/2 lemon
Honey - 1 tbsp
Garlic - 1 clove (for dressing)
Olive oil - 30 ml
Italian herbs
Salt
Black pepper
For the garlic croutons:
Bread - 3 slices
1 head of garlic
Olive oil
Salt
Black pepper
Paprika
Directions:
Chop the cucumbers, tomatoes, bell peppers, and red onions. Add the canned chickpeas and olives.
Make the dressing: combine the lemon juice, honey, crushed garlic, olive oil, Italian herbs, salt, and black pepper. Pour over the salad and toss well.
Add feta cheese.
For the croutons, wrap a head of garlic in foil, drizzle with olive oil, and season with salt and pepper. Bake at 180°C for 30–35 minutes.
Fry the bread slices until golden brown. Squeeze the roasted garlic, mix with salt and paprika, and spread the mixture over the hot croutons.
Arrange the lettuce leaves on a plate, top with the prepared salad, and serve with the fragrant garlic croutons.
