Ingredients:
Broccoli — 1 head
Onion — 2 bulbs
Garlic — 2 cloves
Eggs — 2
Cheddar cheese — 80 g
Mozzarella cheese — 40 g
Philadelphia cream cheese — 3 tbsp
Paprika — to taste
Salt — to taste
Breadcrumbs — 2 tbsp
Panko breadcrumbs — for coating
Olive oil
For the mashed potatoes:
Potatoes — 1 kg
Onion — 1
Bay leaves — 2
Butter — 20 g
Milk — 150 ml
Reserved potato cooking water — 100 ml
Salt — 2 tsp
For the mushrooms:
Mushrooms — 400 g
Onion — 1
Butter
Olive oil
Salt — 1 tsp
Black pepper — to taste
Instructions:
Place the broccoli in a pot, add 1 tsp of salt, and pour in enough hot water to cover it. Cover and cook for 3 minutes. Let it cool.
Sauté the onion and garlic in olive oil until golden brown.
Place the broccoli in a mixing bowl or food processor, add the sautéed onion and eggs, and mix well.
Add the grated cheddar cheese, paprika, mozzarella cheese, salt, cream cheese, and breadcrumbs. Mix thoroughly.
Shape the mixture into patties, roll them in Panko breadcrumbs, and place them on a baking tray lightly brushed with olive oil. Bake in an oven preheated to 200°C (400°F) for 22–25 minutes until golden brown.
Mashed potatoes:
Boil the potatoes with the onion, bay leaf, and salt until tender.
Remove and discard the onion and bay leaf.
Add butter, milk, and 100 ml of the potato cooking water.
Mash until smooth and creamy.
Mushrooms:
Sauté the mushrooms in a mixture of butter and olive oil.
Season with salt and black pepper.
After 5 minutes, add the onion and continue cooking for another 5–7 minutes until the onion turns golden brown.
Serve the broccoli patties with the creamy mashed potatoes and delicious mushrooms.
