Scallion Oil Shredded Chicken Recipe

2 bone-in chicken thighs
2g salt
2 slices ginger
4 red dates
Aromatics for scallion oil
1 small section of green onion
2 stalks of scallion
1/4 onion
Scallion oil sauce
3 tbsp cooking oil
3 tbsp low-sodium soy sauce
1 tsp white sugar
Garnish
white sesame seeds
shredded green onion
Instructions
1.Clean the chicken thighs. Pour boiling water all over the chicken skin. Pat dry completely with kitchen paper.
Rub 2g salt all over the chicken and massage well. Coat the skin lightly with oil.
2.Pour water into the pot, place a steaming rack, a plate and an upside-down small bowl on top.
Place the chicken thighs on the bowl, add ginger slices and red dates. Cover and steam on medium heat for 20 minutes.
3.Take out the steamed chicken. Remove ginger and red dates. Save the chicken broth. Let the chicken cool completely.
4.Cut some green onion strips for garnish. Chop green onion, scallions and onion for frying oil.
5.Heat 3 tbsp cooking oil in a wok. Fry all the aromatics over medium-low heat until slightly browned. Scoop out all residues.
Turn to low heat, add 3 tbsp low-sodium soy sauce and 1 tsp white sugar. Simmer until the sauce bubbles, then set aside.
Tip: If using regular soy sauce, add a little chicken broth to reduce saltiness.
This sauce smells incredible, packed with aromatic fried scallion oil.
Leftover sauce is perfect for noodles, rice noodles, cold salads, dumplings and blanched vegetables.
6.Tear the cooled chicken thighs into bite-sized pieces by hand. Hand-torn chicken absorbs sauce better.
7.Drizzle 3 tablespoons of prepared sauce over the chicken. Garnish with shredded green onion and white sesame seeds. Serve and enjoy!
