Ingredients:

2 eggs
1/2 teaspoon (1 g) vanilla extract
1/2 cup (100 g) sugar
80 g melted butter
150 g fresh cheese
150 g flour
1 teaspoon baking powder

Filling:

2 peaches, peeled and diced

Decoration:

Apples, thinly sliced
1–2 tablespoons lemon juice
Sugar for sprinkling

Instructions:

1. In a bowl, combine eggs, vanilla extract, sugar, melted butter, and fresh cheese.

2. Beat until smooth.

3. Gradually add the flour and baking powder, mixing well until a smooth batter is formed.

4. Peel the peaches and cut them into small pieces.

5. Mix the peaches into the batter and stir well.

6. Slice the apples very thinly. Drizzle with lemon juice, then pour in boiling water and soak for 10 minutes. Drain, pat dry with paper towels.

7. Grease the muffin tins with olive oil.

8. Pour the batter into each tin, filling it about 3/4 full.

9. Arrange the apple slices on top in a flower or petal shape.

10. Lightly sprinkle sugar on top.

11. Bake at 180°C for 25 minutes.

12. Let the muffins cool before serving.
