In this video, I'll show you how to make an impressive gourmet dish from kohlrabi: seared, flavorful marinated, and served on creamy lemon polenta with sweet-and-sour roasted tomatoes. Cooking healthy has never been this easy!
Ingredients for 4 servings:
For the Kohlrabi Steaks
4 kohlrabi
2 tbsp olive oil
1 tbsp soy sauce
1 tsp mustard
1 tsp maple syrup
1 tsp garlic powder
1 tsp thyme
Salt
Black pepper
1 tbsp vegan butter
For the Lemon Polenta
220 g polenta (1 1/4 cups)
850 ml vegetable broth (3 1/2 cups)
200 ml oat milk (3/4 cup + 1 tbsp)
2 tbsp vegan butter
2 tbsp nutritional yeast
1 tsp lemon zest
1 tbsp lemon juice
Salt
Black pepper
For the Roasted Tomatoes
350 g cherry tomatoes (2 1/2 cups)
1 tbsp olive oil
1 tbsp balsamic cream
Salt
Black pepper
For Topping
25 g almonds, chopped (1/4 cup)
Fresh thyme leaves
Small basil leaves
A little balsamic cream for drizzling

💡 My tip: Be sure to cut the kohlrabi at least 3–4 cm thick – this way the steak gets a nice crust and stays tender inside. Don't sear it too hot, or the marinade will burn!
