■ Ingredients: Serves 2
◯ 2 Eggs
[A] 800ml Water
[A] 2 tbsp Vinegar
[A] 2 pinches Salt
◯ 4 slices White bread (crusts removed)
◯ Cake flour
◯ 1 Mozzarella cheese
◯ (Optional) Italian parsley
◯ 1 Beaten egg
◯ Grated parmesan cheese
◯ 1 tbsp Vegetable oil
◯ 20g Butter
◯ Prosciutto
◯ Black pepper

■ Instructions
[Preparation] Slice the mozzarella and drain well to remove excess moisture.
① Bring [A] to a boil in a pot, then reduce to low heat. Create a gentle whirlpool and carefully add the strained eggs. Cook on high for 2 min 30 sec, then transfer to ice water and drain.
② In a tray, combine the beaten egg and grated parmesan cheese, mixing thoroughly.
③ Sandwich the mozzarella and parsley between the bread slices.
Lightly coat with flour, then soak thoroughly in the mixture from step ②.
④ Heat oil and butter in a skillet and toast ③ on low heat until golden on both sides.
⑤ Top with prosciutto and the poached egg, then garnish with parmesan, black pepper, and parsley.
