
Japan’s Lucky Sushi — Eat This for a Good Year Ahead

In Japan, Ehomaki is a special sushi roll eaten to welcome good fortune and a happy year ahead.
Today, I’m sharing a modern version filled with crispy ebi fry (our all-time favorite!), combining tradition with a delicious twist you can easily make at home.
・Sushi rice
1 ½ cup (10 oz/ 280g) freshly cooked rice
3 tablespoons sushi vinegar
・Homemade sushi vinegar
3 tablespoons sugar
1 cup (240 ml) rice vinegar
1 teaspoon salt
1 piece kombu (0.1 oz / 3–5g, 2×4 inches or 5×10 cm)
・3 half sheets nori
・Filling
3 medium ebi-fry
6 sticks crab sticks
2-3 Lettuce leaves
1 hard boiled egg
1 tablespoon mayo
