Ingredients:
🥚 3 Eggs
🧀 2 tbsp Ricotta cheese
🍅 5 to 6 Cherry tomatoes
🥑 1/2 Avocado
🍋 1 Lemon
🥬 Arugula to taste
🫒 1 tbsp Olive oil
🖤 Pinch of Black sesame seeds
🧂 Salt & Pepper to taste
How to make it:
Prep the fresh sides: Slice the lemon, cherry tomatoes, and avocado.
Mix the base: Crack the eggs into a bowl, add salt and pepper, and whisk. Add the ricotta cheese and whisk again until smooth.
Toast the sesame seeds: Heat a skillet, pour in the olive oil, and spread it evenly. Sprinkle in the black sesame seeds and let them toast briefly.
Cook the omelet: Pour the egg mixture into the skillet. Cover with a lid and cook on low heat for 5 mins.
Plate and Serve: Remove from heat. Arrange the fresh arugula and sliced veggies on one half of your plate, and place the omelet on the other half. Dig in! 🌿
