Hello everyone, 恭喜发财!万事如意!
And if you are not watching this video during Chinese New Year, I wish that you have a beautiful day too.
Today we are cooking this dish known as Claypot White Pepper Prawns with Glass Noodles.
So let's start cooking!
Now we'll prepare the sauce.
Over here I have with me 120ml of water.
Add in 1 tbsp of oyster sauce.
2 tbsp of light soy sauce.
Half a tsp of sugar.
As well as 1 tbsp of Chinese cooking wine.
For those of you who don't take alcohol or are Muslim friends, you can just omit this.
Mix them up well, set them aside and I'll show you how I put the dish together.
Now we'll put the dish together.
Heat up a claypot, or if you do not have a claypot, you can use a normal pan, no problem.
Add in a good amount of oil. We need a little bit more oil for this.
Add in about 5 slices of young ginger, sliced thinly like this.
Get the flavour out.
I'm using medium heat over here.
We just need to fry the ginger until we can smell it.
This will just take a minute or two.
Mmm, I love the smell of ginger in my kitchen.
This amount is good for 4 persons.
If you are serving for more, just double up the ingredients.
Once we can smell it, we'll add in our spring onion stalk.
5 pieces of it.
Put it in.
2 shallots, sliced thinly, put them in.
Add in also 3 tablespoons of white peppercorn that I've grind into very small coarse pieces like this.
Put them all in.
Move them around.
Fry them up a little bit to get all the fragrances out.
Now if your pot seems a little bit dry, feel free to add in a little bit more oil.
You want to flavour the oil up so that this dish is really really fantastic.
I can start to smell the beautiful aroma from all these aromatics.
Beautiful fragrance that I'm getting over here.
Now we'll add in our prawns.
300 grams of prawns or medium sized prawns.
I've actually halved them like this and taken out the vein.
Just slide them in.
Add in also 8 cloves of garlic.
Just pour them on top.
Make sure that the prawns have contact with the clay pot or your pan.
We just need to fry this for a minute or two.
Just to get them 50% done up.
You can see that the prawns are turning red on one side already.
This is what we want.
This dish is super easy to make and quite fast actually.
And it's super super delicious.
Now we can see that the prawns are starting to turn red.
Now we'll add in our glass noodles.
I have with me over here 80 grams of glass noodles pre-soaked.
Just put them on top.
Just soak the glass noodles for approximately 10 minutes until they are soft.
Now we'll add in our sauce.
Just pour it over.
Put on the lid.
We'll cook this for 1 minute.
I'll see you back in a while.
A minute is up.
Let's remove the lid.
Look at how pretty this is.
Add in the rest of our spring onions.
Give it a little mix just to make sure that the glass noodles can absorb all the beautiful sauce.
This is so delicious and the prawns are actually cooked already.
We just need to move this around a little bit.
Once you have mixed up the glass noodles and they have absorbed the sauce,
we'll just add in 1 teaspoon of sesame oil.
Pour it over the glass noodles.
Turn the heat off and it's time for our reunion dinner.
And now the dish is done.
Let's have a taste.
Smells really really good.
The peppery smell.
This is fantastic.
Let's try this now.
I love the spicy note from the white pepper.
The savoriness from the oyster sauce.
The sweetness from the prawns.
This is really fantastic.
