🔹Ingredients 🔹
Berry Layer:
✔Berries (any) — 450 g
✔Sugar — 40 g (add more for sour berries)
✔Cornstarch — 45 g
✔Water for dissolving the starch — 100 ml
Cream Layer:
✔Cream (15–20%) — 450 ml
✔Sugar — 50 g
✔Vanilla sugar/Vanilla — to taste
✔Cornstarch — 45 g
✔A pinch of love and good mood (absolutely necessary)
My mold is 15 x 15 cm in size.
❗Notes❗
✅I used frozen raspberries and strawberries. You can use any berries or fruit/berry puree.
✅ My berries are very sweet, so I did not add much sugar. Adjust the sweetness to your taste. With the specified amount of sugar, the dessert was not sweet at all.
✅ The cream can have between 10 and 20% fat. You can also use whole milk.
✅ Use cornstarch; it does not have the typical starch taste and is completely unnoticeable.
✅ I bring the berries to a boil until they start bubbling, but do not let them boil. I strain them to remove the seeds. If your berries are seedless, bring them to a boil and immediately stir in the starch without removing them from the heat. If the berries are not juicy, you can add a little water.
✅ The pot must have a thick bottom. Cook the mixture over low heat and stir constantly, especially when the starch begins to thicken.
✅ I do not line the pot; I simply grease it with vegetable oil. The dessert mixture does not stick and easily comes out of the smooth mold.
✅ Do not use powdered sugar for dusting the candies – it melts and leaves a moist surface. A mixture of starch and coconut flakes, coconut flour, rice flour, or non-melting powdered sugar is better.
✅ The dessert can be stored in the refrigerator for up to 7 days (provided the cream is fresh).
