
How to cook delicious Fried Rice (Japanese style)
Hi everyone! Today, I’ll show you how to make delicious Japanese fried rice. What makes it unique is its light and fluffy texture, with the rice nicely separated yet still moist, and it's packed with rich, savory flavors. Ingredients ;
Rice 350g ( after cooked ) Short or Medium grain Rice
Pork belly slices 90g
Carrot 30g
Fresh Ginger 15g
Egg 2
Green onion 2
Seasoning ;
Salt 3pinches
Black pepper 1 pinch
Soy Sauce 2 tsp
Sake ( Japanese rice wine ) 1 Tbsp
Chicken bouillon powder 1,5 tsp
( I'm using Ajinomoto Chicken bouillon powder. If you use Lee Kum Kee, please use 2 tsp)

Preparation Instruction
1) Cook rice with slightly less water than usual.
2) Cut the green onions. Keep white and green parts separate.
3) Cut the carrot into small diced pieces. Don't cut too big. Smaller pieces add slight sweetness
without overpowering the rice.
4) Cut the ginger into thin strips. ( As thin as possible ) Don't chop it. Strips add much more
fragrance.
5) Beat the eggs until well combined.( Please season with a pinch of salt )
6) Rice is ready. Let the rice cool for 5 to 10 minutes to remove excess moisture. I don't use old cold
rice. Warm rice is much easier to separate. If you use old rice, please microwave it before cooking.
Cooking Instruction
1) Into a cold frying pan, add 2 tablespoons of neutral cooking oil. Then, add pork belly pieces,
WHITE part of green onions, and season with a pinch of salt. Then, turn on the heat to
medium-low. Cook them slowly and let the aroma and flavor infuse into the oil.
2) When the pork belly starts to turn slightly brown, add the ginger strips and stir fry until the
ginger becomes fragrant. it takes about 30 seconds.
3) Once the ginger becomes fragrant, push everything to one side of the pan and turn the heat
up to Medium. Then, pour the beaten egg into the open space. Immediately after, add the rice,
and carrot pieces on top of the egg. Then, press the rice against the egg with the back of a
Silicon spoon imagining the uncooked part of the egg will cling to the rice. Then, mix everything
to coat the rice with flavorful oil.
4) Then, toss it once. Press the rice GENTLY with the back of the spoon, it'll help to separate
the rice nicely. Then, mix again. And repeat the same process 4 or 5 more times ( 2 to 3
minutes ) As you repeat, the rice becomes drier and separates nicely.
5) Add salt and chicken bouillon powder and mix until they are evenly distributed. ( 40seconds)
Basically, repeat the same action of tossing, pressing, and mixing.
6) Push everything to one side of the pan, and pour the Soy sauce and Sake mixture into the
open space. Let it sizzle and develop a smokey flavor. Then mix all together and distribute
the flavor. ( 1 minute )
7) Add the GREEN part of green onions for a pop of color, along with a pinch of black pepper.
Mix until the green onion becomes fragrant and is evenly distributed. ( 1minute) and
your fried rice is complete.
