This roasted cabbage truly melts like butter! This easy roasted cabbage recipe is perfect for a quick dinner. Light, wholesome, and so delicious roasted cabbage steaks that even meat lovers will be amazed. This vegan dish is delicious and can be combined with many other dishes to make a quick lunch. Roasting softens the cabbage leaves and allows them to absorb the flavors of the seasonings sprinkled on them before cooking. Tender baked cabbage steaks with a hint of paprika and paired with a zesty dairy-free yogurt sauce. Simple and easy cabbage recipe everyone can make at home. Ingredients
1 head of cabbage
3 tbsp. olive oil
½ tsp. salt or to taste
2 tsp. paprika
1 tbsp. garlic powder

🥣 Sauce ingredients:
1/2 cup plain dairy-free yogurt
3 small cloves garlic, minced or pressed
2 Tbsp fresh dill (or sub half the amount dried dill)
1 healthy pinch sea salt
1 pinch cayenne pepper
1-2 Tbsp lemon juice
1 drizzle extra virgin olive oil

Instructions 1.
1.Cut the stems off the cabbage head and then cut each one in half, then in half again. You should have four thick cabbage slices that are about ¾ (2 cm) to 1 inch (2,5 cm) thick .
2.Place the cabbage steaks on a baking sheet that is lined with parchment paper, allowing some space between each one to even cooking.
3.Brush the cabbage with the olive oil, coating them thoroughly. Then generously sprinkle the salt, garlic powder, and paprika on the cabbage steaks.
4.Flip the cabbage over and repeat, brushing them with oil and sprinkling the seasonings. Then add a pinch of red pepper flakes to each one, if desired.
5.Roast on the middle rack for about 40 - 45 minutes at 450 °F (220 °C), turning once, or until the edges turn brown and crisp (it may take longer depending on how thick your wedges are). Serve hot out of the oven.
If desired, cover the baking dish with aluminum foil to make the cabbage softer or prevent it from burning.
The foil helps retain moisture, preventing the casserole from drying out. After 25-30 minutes, remove the foil and bake for another 15 minutes to lightly brown the top.

Instructions 2.
1.To a small mixing bowl add yogurt, minced garlic, fresh dill, salt, cayenne, lemon juice, and olive oil and stir to combine.
2.Taste and adjust flavor as needed, adding more lemon for acidity, garlic for zing, dill for herbal flavor, salt to taste, pepper for heat, or olive oil for richness.
