In this video I will show you a particularly elegant meat dish that not only tastes fantastic, but also impresses when cut.
The pork is filled only with large pieces of apple, rolled very tightly, seared thoroughly and then cooked perfectly in the oven.

📋 INGREDIENTS:
meat and stuffing
• 500 g pork loin or thick pork tenderloin (17.6 oz)
• 2 large firm apples
• Salt
• black pepper
• 1 tbsp vegetable oil
• 1 tbsp butter
• 1 tsp honey
• fresh thyme

Potato and celery puree
• 400 g floury potatoes (14.1 oz)
• 200 g celeriac (7 oz)
• 40 g butter (1.4 oz)
• 80 ml cream or milk (1/3 cup)
• Salt
• freshly grated nutmeg

Dark apple jus
• 1 shallot
• 2 apples
• 1 tsp butter
• 1 tbsp olive oil
• 1 tsp tomato paste
• slightly cloudy apple juice
• 100 ml strong stock (1/2 cup)
• 1 sprig of thyme
