Hello everyone. Welcome back to my channel. Today we are cooking this intensely aromatic garlic
scallion prawn. My family and friends love this dish very much. It is great to team up with rice,
noodles, and even for making sandwiches. Okay, let's get started now. I am using 10 prawns today.
Remove the head, shell, and tail as we just need the meat.
Make a deep cut at the back of the prawn and remove the black line which is its digestive
tract and then wash clean under the tap water. Marinate the prawn with 1 tsp cooking wine,
1 tsp white pepper powder, 1 tsp garlic powder, 1 tsp salt. Mix the seasoning well with the prawn
and then put aside waiting for cooking. 2 shallots or half an onion. Slightly mince it.
4 cloves of garlic. Mince it. 3 to 4 stalks of scallion. Separate the white part and the green
part and cut both of them to small pieces. Now we start cooking. Put 1 tbsp cornstarch
to the prawns that we marinated just now. Mix the cornstarch well with the prawn
and then put in another tbsp of cornstarch. Mix it well with the prawn again. This process
is trying to create a thicker coating on the prawns. Now we will do a final coating before
deep frying. Put a tbsp of cornstarch to a plate. Coat the cornstarch thoroughly on the prawn.
Continue adding the cornstarch to the plate when it is used up. Heat up the oil to 160 degrees
Celsius. Put the prawns in and deep fry until they are slightly turn to brown.
If your wok is big enough you can deep fry all at once. My wok is pretty small so I have to
separate them to two batches. Now the color is right. Remove the prawns to a plate and get the
of the prawns done. Now we will do a second time deep frying. Heat up the oil to 180 degrees
Celsius. Put all the prawns in and deep fry for one minute or until they are turn to medium brown
and then transform them to a plate again. Remove the oil and put the wok back to the stove.
We do not need to wash the wok. Heat up the wok. Put the onion and the garlic mince in. Put
quarter to half teaspoon salt in to your taste. Half teaspoon oil. I used the oil for deep frying
just now. Saute until the onion slightly softened and then put the white part of the scallion in.
Give everything a few tosses and then put the prawns in. Give everything a few good tosses
and mix the onion, garlic, and scallion well with the prawns and then finally put the green
part of the scallion in. A few more tosses. This dish is done. This is a flavorful, aromatic,
and quick cooking dish. The texture of the prawns are tender inside and slightly crispy outside.
The balanced combination of onion, garlic, and scallion provides a subtle sweetness,
garlicky, and zesty aromatic flavor. I hope you will give this recipe a try and let me know your
thoughts. If you like it, please share it out. Okay, that's all for this video. Thanks for
watching and I will see you next time. Bye.
