all right welcome back i got a great one for you today we're going to be getting back and do some
shrimp the last shrimp video i did but boom you guys loved it so i'm going to bring something
back to you this is a really really cool recipe that i'm not quite sure exactly where i remember
it making it or learning it from but anyway it's one of my favorites it's honey garlic shrimp you
heard that right honey garlic shrimp and it's really all about the layering of flavors again
making sure it all comes together you might think honey and shrimp i don't know about that watch
this you will be amazed and it is so delicious so we're first going to get started by getting our
burner on here and while that's heating up i want to show you we're using some shrimp here
i've got about 12 this should feed three people maybe two people and these are 16 20 anytime you
see that number on the top of your bag of frozen shrimp 16 20 means that they're approximately 16
to 20 shrimp per pound okay so that's you know if you see 36 40s that means they're gonna be a
little smaller that means there's 36 to 40 shrimp per pound all right so that's what that number
means when you see it on top of the bag all right so we're gonna start with some extra virgin olive
oil as we always do and we're gonna get that heated up while that's going we will hit our shrimp
with kosher salt and black pepper that's right hand was using the seasoning left hand i'm going to turn
like so get the other side and here we go kosher salt and black pepper perfecto okay so now we've
got a pan ready to roll and there are a couple of techniques i want to talk to you about today
that are really really going to be helpful as you are progressing in your kitchen confidence
so let's get the shrimp in and as we all know shrimp does not take long
the key here is until they are at this point garlic paste will be about one tablespoon
just to get that shrimp and that would be equivalent of about three cloves of garlic
what i'm going to do is i'm going to turn the heat off this is a little trick because we don't want
so when we come back i'm going to show you how we deglaze this pan we're going to add the rest
of the ingredients we're going to start making our sauce to make this this beautiful honey garlic
shrimp stay right there be right back all right so as you come in here you can see we've got all
of this fond on this bottom here which is just deliciousness we don't want to mess with that at
all but before we get the heat back on i want to show you everything we're going to be adding into
this we're going to be doing some cherry tomatoes which i have just sliced in half we have some
unsalted whole butter we're going to use a little bit of red pepper which is optional
i like a little bit of bite some oregano lemon juice of course honey chicken stock
some tomato paste okay maybe a little bit more garlic and we're home free so let's get going
we'll get the burner back on and i want to put this down to about a simmer like so the first
thing we want to do is we want to get our tomatoes in here we want to get them nice and going at the
same time i'm going to put some tomato paste one tablespoon and you've heard me talk about why i'm
this is going to give this sauce a rustic
kind of roasted feel to it which i love now we'll add a little bit of lemon juice
and then of course some chicken stock probably about a quarter cup is all we're going to need
and once the chicken stock is in there let's go ahead and start to get that fond all that goodness
on the bottom there we want okay isn't that color beautiful that's what we're looking for
love it now we'll add a little bit of red pepper flake like i said not too spicy for me
but just enough to where you can feel it on the back of your tongue so you know it's present it
made its arrival on time a little bit of oregano about a teaspoon and last but not least of course
the honey the honey about two to three tablespoons perfect and then the last minute a little bit more
garlic we added some for the shrimp but now let's add some for the sauce about another
two teaspoons i'm just going to get this all mixed around that's looking so good i love that
dark rich flavor it's just what we're looking for and what we want to do here is we're going
to let it reduce down and the natural reduction of this sauce is what's going to be the sauce like
you don't need a thickening agent you don't need a cornstarch slurry you don't need a roux although
you could you could use that if you wanted to but the natural way to do this is just to keep it on
a low simmer and let the flavors reduce down into a natural sauce thickening it all by itself that's
that's where you really are separate yourself as a real real real amazing cook so when we come back
we'll check this we'll taste for seasonings adjust if we have to and then we'll finish it up we'll
add the shrimp back in and then we're on our way to take a taste be right back all right come look
at this you can see how this is reduced down into a nice syrupy sauce it's exactly what we're looking
for and then oh it's amazing i did take a taste and what i'm going to do is i'm going to add just
about another pinch of kosher salt another little pinch of black pepper and now we're going to put
this burner back on again i want to keep this down to a simmer and we're going to add some fresh
unsalted whole butter about two tablespoons and trust me when i tell you this is what makes the
whole sauce the flavors are fantastic so what you want to do is just kind of just slowly
let this beautiful creamy butter emulsify and add another layer of flavor
now the shrimp remember three-fourths of the way cooked on purpose back into the pan now
chopped fresh parsley and fresh basil in the pan look at this look at this are you serious
wow we're gonna let this go for just about another two minutes i'm gonna get that shrimp to
completely cook it through not overcooked when we come back we will plate this up we will take a
taste and we are in for some garlic honey shrimp heaven be right back all right look at this oh my
goodness gracious if you could smell this whoa i can't wait for you to try this look at this shrimp
are perfectly cooked sauce is amazing so now let's take it to the plate i went ahead and prepared some
basic white rice and what we want to do here let me just take our shrimp place it in like so
and now what i like to do is get our sauce just like so just kind of swirl it around make sure
you got all the goodness all in there and we just go on top like this and there you have it but we're
not quite done yet i mean this is perfect as it is right now honey garlic shrimp but we must add
some beautiful pecorino romano cheese now let me explain to you why this cheese is best for this
now pecorino romano made in mostly started in rome but then it started making mostly made in tuscany
it is a sheep's milk cheese it's very nutty it's got kind of a tanginess to it it's a little earthy
a little salty as well but what's what it does with the earthiness is because of the earthiness
of the of the parsley and the basil it's going to counteract with that sweetness of the honey
and it's just so unbelievably delicious and if i get my italian correct pecorino romano
so this would be referred to as uh formaggio di pecora formaggio di pecora which basically means
sheep cheese and that's what this is it's sheep's milk cheese all right enough italian education
there and let's get on top here and again like i said when you add this it really just
gives it that extra little counterbalance to the sweetness of that honey
and you are in heaven like never before all right look at that a little housekeeping here
and then let's go in for a bite shall we let's do this a little rice tomato shrimp
that is spectacular
that is so good again as you've watched me over and over again in all of my videos
it's all about the layers of flavor when you put ingredients in the timing of it making sure all
of your ingredients come together as one to become to create this incredible dish i have a step-by-step
blueprint that explains all of this about seasonings about timing about what pan to use
about where to cook what to cook how to cook it's all there in a blueprint i'll leave a link in the
description box below grab a copy it's a great ebook it'll really help you along but i'm telling
you this is really fantastic garlic honey shrimp over white rice oh so so good so so good i cannot
wait to see on the next video i am chef brian thanks so much for watching and remembering until
next time eat well and stay healthy
