📝 Ingredients (for an 8×8 in / 20×20 cm pan)
• 100g unsalted butter (7 tbsp)
• 150g semi-sweet chocolate or dark (5.3 oz or 1 cup chopped)
• 115g brown sugar (½ cup packed)
• 115g white sugar (½ cup)
• 3 large eggs
• 1 tbsp vanilla extract (15 ml)
• 80g all-purpose flour (½ cup)
• 40g cocoa powder (⅓ cup) optional: 25g dark + 15g regular
• ½ tsp instant coffee (optional)
• A pinch of salt
• 150g mixed chocolate chunks and chips (1 cup) for folding in & topping
👩🍳 Instructions
1️⃣ Brown the Butter & Melt Chocolate
• Cook butter on medium heat until golden and nutty, stirring constantly.
• Chop the chocolate and add it to the butter. Stir until smooth and glossy. Set aside to cool slightly.
2️⃣ Whisk Sugars & Eggs
• Add vanilla.
• Whisk sugars and eggs for 1–3 minutes until pale, thick, and glossy. This is key for that shiny, crinkly top.
3️⃣ Add Vanilla & Fold in Dry Ingredients
• Sift in flour, cocoa powder, instant coffee, and salt. Fold gently until just combined.
• Cocoa balances sweetness perfectly, and coffee enhances the rich chocolate flavor.
4️⃣ Combine with Butter-Chocolate Mixture
• Pour in the cooled butter + chocolate mixture and fold gently until smooth and fully combined.
5️⃣ Add Chocolate Chunks & Prepare Pan
• Fold in chocolate chunks.
• Pour batter into a lined 8×8 in (20×20 cm) pan, smooth the top, and sprinkle a few extra chunks on top.
6️⃣ Bake
• Bake at 180°C (350°F) for 22–25 minutes depending on desired fudginess.
Test with a toothpick. It should come out with a few moist crumbs, not clean.
