Ingredients

Pre-prepared Ingredients
400g (14.1 oz) egg tofu, cut into 1.5–2cm thick rounds and fried until golden brown
1 red onion, quartered, separated into 'petals' and lightly fried
60g (2.1 oz) sugar snap peas, de-stringed and lightly fried
10g (0.4 oz) dried salted fish, rinsed, diced and fried until crispy (for garnish)

For the Stir-Fry
5g (0.2 oz) dried salted fish, rinsed and diced
100g (3.5 oz) minced pork
3 cloves garlic, finely chopped
5g (0.2 oz) young ginger, minced
A few dashes of white pepper
80g (2.8 oz) canned baby corn, drained


For the Sauce
200ml (7.0 fl oz) water
1 tbsp oyster sauce
½ tbsp premium dark soy sauce
½ tsp sugar
1 tbsp cornflour, mixed with 2 tbsp cold water to make a slurry

To Finish
1 egg, beaten
