Crispy on the outside, tender on the inside, and served with a spicy green pepper Dijon sauce and fine pieces of cucumber!
This schnitzel is a delicious alternative to the classic: coated in Parmesan cracker breading, fried until golden brown, and served with a creamy sauce that's slightly spicy and aromatic.

📋 INGREDIENTS:
For the schnitzel
• 4 pork schnitzels (approx. 180 – 200 g (6 – 7 oz) each)
• Salt and pepper
• 50 g flour (⅓ cup)
• 2 eggs
• 100 g cornflakes, finely blended (1 cup)
• 40 g Parmesan cheese, freshly grated (⅓ cup)
• 1 teaspoon dried herbs (e.g. oregano or thyme)
• Vegetable oil for frying
For the sauce
• 1 small onion, finely chopped
• 1 tbsp butter
• 1 tbsp green pepper from the jar, lightly crushed
• 1 tsp Dijon mustard
• 200 ml chicken stock (¾ cup)
• 150 ml whipped cream (⅔ cup)
• 2 compote cucumbers, finely chopped
• Salt to taste
