Autumn here is a season of warmth, homemade treats, forest walks, and nature’s rich treasures. 🌿 Morning in the Countryside🍂 I start the day with a simple Nordic breakfast, gravlax toast, warm porridge, and a cup of tea. After a slow morning, I bake a homemade Blackcurrant Streusel Cake, perfect for coffee time. 🍄 Mushroom Foraging in the Forest🍄 Together with my husband Hannu and our beloved dog Hilma, we walk into the quiet forest to forage wild mushrooms: • Chanterelles (Keltavahvero) • Yellowfoot Trumpet Mushrooms (Suppilovahvero) 🏡 Cozy Home Cooking & Preserving🏡 Back home, I gently clean the mushrooms and cook a comforting creamy mushroom pasta, served with bread and apple juice. I also make a special mushroom jam from trumpet mushrooms and preserve the chanterelles for winter meals.💛🍰🌲 Thank you so much for being here🌸💛 Sending a lot of hugs....💛
📌Blackcurrant Streusel Cake📌 Ingredients:📌 For the batter:
📌 125g all-purpose flour 1 tsp baking powder 100g brown sugar 2 large eggs 100 ml milk 75g soft butter 1 tsp vanilla extract Pinch of salt
For the filling:📌 200g black currants (fresh or frozen), 2 tbsp brown sugar
For the streusel topping:📌 75g all-purpose flour 50g cold butter 50g brown sugar 30g coarsely chopped walnuts Instructions:📌
1. Preheat the oven to 180°C.
2. Line a (9-inch) round cake tin or springform pan with parchment paper.
3. Make the batter: Whisk eggs and sugar until light and fluffy. Add butter, milk, and vanilla. Sift in flour, baking powder, and salt. Mix gently until smooth.
4. Pour the batter into the pan.
5. Make the filling: Toss currants with sugar, then scatter evenly over the batter.
6. Make the streusel topping: rub flour, sugar, butter, and coarsely chopped walnuts together until crumbly. Sprinkle on top of the berries.
7. Bake for 35–40 minutes, until golden and a toothpick in the center comes out clean.
8. Remove the cake from the oven and cool slightly before slicing.
9. Serve with whipped cream or a scoop of vanilla ice cream. It's coffee time! Happy Baking!💛💛💛
