Hello, my dear friends! 🍎💛
Welcome back to another Slow Living vlog from the Finnish countryside. 🇫🇮🍂 I started my morning by baking a spice pumpkin and sweet potato latte cake, which I enjoyed with a cup of coffee. Later, Hilma and I took a peaceful walk in the forest, soaking in the crisp Finnish air and admiring the golden leaves.

Once we were back home, I prepared a fig salad with rye bread and tea. I made a healthy salmon meal for Hilma 🐾 and carried firewood to the fireplace, which warmed our home as evening fell. 🔥I ended the evening with Baked Mediterranean-Style Trout with Roasted Cauliflower served with mushroom pumpkin risotto, paired with a glass of white wine. 🍷💛

🎃Spice Pumpkin Sweet Potato Latte Cake📌
🧁Ingredients:📌
250g all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
2 tsp ground cinnamon
1 tsp ground ginger
½ tsp nutmeg/cardamom
¼ tsp cloves (optional)
200g brown sugar
180 ml vegetable oil or melted butter
3 large eggs
150g sweet potato purée
150g pumpkin purée
120 ml strong brewed coffee or espresso (cooled)
1 tsp vanilla extract

☕Instructions:📌
Preheat oven to 175°C
Line a 9-inch round baking pan or a springform pan with parchment paper
Combine dry ingredients in the mixing bowl (flour, baking powder, baking soda, salt, and spices).
Whisk wet ingredients in another mixing bowl (sugars, oil, eggs, pumpkin, sweet potato, coffee, vanilla).
Mix together just until smooth (don’t overmix).
Bake for 35 minutes, or until a toothpick inserted into the cake comes out clean.
Cool for at least 15 minutes.
Transfer to a serving dish, dust with powdered sugar and coffee grounds.
