The season unfolds slowly: first Christmas decorations, evergreens, flickering candles, and the scent of something sweet baking in the oven. It’s time to embrace the magic of winter in the countryside.

Later, I bake cinnamon medlar rolls — an old-fashioned English winter recipe made with local flour from a 17th century watermill and a forgotten fruit called medlar, loved for its toffee-apple flavour and nostalgic sweetness.

The tea ritual returns too, steaming cups, quiet music, candlelight, and the soft company of my cat Cassie. A perfect reflection of peaceful, slow living in the English countryside.
