In this week’s vlog, I’m sharing more of my gestational diabetes journey and the little things that bring me joy along the way. 🌸
🍓 Breakfast discovery → I’ve been experimenting with different options and finally found that overnight oats and yogurt jars are delicious, filling, and surprisingly blood sugar–friendly. 🍗 Lunch outing → Met a friend for Korean fried chicken (yes, fried chicken!) but with a focus on protein-rich choices and mindful portions—and it worked out fine for my blood sugar. 🌼 Everyday comforts → Picked up some fresh flowers to brighten the house and enjoyed cozy little moments the next day while trying out my overnight oat jar.
I hope this vlog gives you a little inspiration if you’re also navigating gestational diabetes—or if you just enjoy aesthetic, slow-living food and lifestyle videos. 💫

There is this amazing overnight oats recipe I must share with you because I've tried it out
and it's really really amazing. It's super low carbs, low calorie, sugar friendly and
most importantly very satisfying, very yummy. It's a great breakfast or snacks option.
Here are everything we need in this tray. Oats of course. I would recommend using like a rolled oat.
This is what I use. I don't think the brand really matters but something like that will
be better than instant oats because it's just a bit more low GI. A Greek yogurt,
ideally something with no added sugar. Soy milk which is a rich source of protein,
ideally an unsweetened version. A fruit of a choice. I'm choosing a low GI fruit which is
blueberries. That's also very yummy. The source of my sweetness comes from this, a stevia sweetener
and this is almond meal. You can also choose like a soy milk powder if you can find a sugarless
version but these are very easy to find from the supermarket. They have almost no carbs in it
and it adds a nice texture.
We're not going to use too much of the oats. It'll be about 30 grams we're using all up
because although it is very low GI and a good source of carbs, there is still a matter of
quantity per serving. Any container but ideally something you can seal. Add a layer of oats in,
just a thin layer, roughly this much. That's about 15 grams roughly. Soak the oats
with a little bit of soy milk. You can also use almond milk or milk if you like.
Not too much, just enough to cover the oats. I would also add just a tiny bit of sweetener.
The other option is you can add a layer of bananas if you like bananas. I don't like bananas so
that probably is not an ideal option for me otherwise they'll be a good source of where your
sweetness comes from. Now we will make an almond yogurt cream which is a better texture than yogurt
alone. A Greek yogurt so it is very rich in protein. Also it is a thicker texture to make
that cream base. A couple of spoonfuls like this. That's probably enough. This is when where the
almond milk comes in. The reason we're adding almond milk or soy milk powder or even milk powder
to the yogurt mixture is to firstly thicken up the texture into more like a cream cheese
kind of texture, cakey texture and also it lowers the acidity level of the yogurt so it tastes more
like a cream. Because I'm using a sugarless yogurt I'm going to add some sweetener.
And just a couple of spoonfuls of the almond milk. Now we can add the mixture of our cream
to the jar to form the next layer. Repeat the process. One more layer of oats.
Soak with soy milk and another layer of our cream.
Sprinkle and maybe even a tiny layer of almond meal just for texture.
So
so
Glucose level 4.8 two hours after the meal. It's actually excellent. The rolled oats is really a
low GI option.
