In this video, I share with you my version of crispy baked mooncake with coconut rice filling. With this cake crust, I cook the sugar water and let it cool before using. The amount of sugar in the crust is a little less than the regular crust + the coconut rice filling is less sweet, so overall this is a less sweet mooncake.

INGREDIENTS
For 5 cakes 150g

Green rice and coconut filling
150g dried green rice
150g shredded young coconut
20g sugar
50g coconut milk
50g condensed milk
120g pandan juice
10g vegetable oil
10g cooked glutinous rice flour
1 drop of pandan paste

Dough:
130g quick sugar syrup
30g vegetable oil
1/8 tsp baking soda
12g milk powder
