
You've never eaten potatoes like this before. Vegan potato nest with mushroom ragout
Today I'm showing you a very special vegan recipe: crispy oven-baked potato nests filled with a creamy mushroom ragout. Golden brown and crispy on the outside, wonderfully moist and flavorful on the inside, perfect as an autumnal main course or as a special treat for guests.
The potatoes are baked in a muffin tin, and the ragout consists of fresh mushrooms, onions, garlic, and plant-based cream. Simple but incredibly delicious! You can also make this dish ahead of time and reheat it just before serving.
📋 INGREDIENTS:
For the potato nest:
• 500g floury potatoes (about 3 1/3 cups, peeled and grated)
• 1 tbsp cornstarch
• Salt, pepper, nutmeg
• Oil for greasing the muffin tin
For the mushroom ragout:
• 300g mushrooms (about 3 cups, roughly chopped)
• 1 small onion
• 1 garlic clove
• 2–3 tbsp plant-based cream
• 1 tsp thyme (fresh or dried)
• 1 tsp soy sauce
• Salt, pepper
• A squeeze of lemon juice
