For the braised mushrooms
3g (0.1 oz) dried mini shrimp, rinsed and dry-fried (substitute with Sakura shrimp or roughly chopped dried shrimp)
3 cloves garlic, chopped
12 small Chinese dried mushrooms, rehydrated and stem removed (reduce the quantity if using larger mushrooms)
½ tsp sugar
¼ tsp salt
350ml (11.8 fl oz) water
1 tbsp oyster sauce
⅓ tsp chicken stock powder
Cornstarch solution (for thickening)

For the cabbage rolls
8 cabbage leaves, tougher stems trimmed
150g (5.3 oz) shrimp, deshelled and deveined (with shells on: 275g (9.7 oz) or about 12 medium prawns)
200g (7.1 oz) minced meat (chicken or pork)
½ tsp sugar
½ tsp salt
1 tsp young ginger juice
1 tsp Chinese cooking wine (Shaoxing wine)
1 tbsp oyster sauce
A few dashes of white pepper
½ tbsp cornflour (or cornstarch)
