So today I'm making this shrimp with glass noodle casserole. There's vegetables, there's protein,
there's noodles. It's really a very nice one-pot meal. For Chinese New Year, this is also a great
option because we have shrimp, whole shrimp, the head and tail, everything. And it symbolizes,
shrimp symbolize happiness because it's like ha ha ha ha ha ha ha ha.
And it's very easy in a sense that we're just gonna layer everything. There's no pre-cooking.
And then we're just gonna with the lid on, put it on the stove, cook for like 12-15 minutes,
depends on the size of the shrimp, and the dish is done. It's also good for Chinese New
Year because it doesn't need to be cooked in a wok. So you have a pot on the stove that's
cooking a dish and your wok does not need to be used. It can be reserved for other stuff. Yeah,
and this is a great candidate. You can you can prepare it ahead of time and then when you're
ready to serve it, cook it for 12 minutes and bring them to the table. The next layer is the
napa. I made a point to have a lot of vegetables in a dish like this because I know readers will
add anyway on their own. Okay, there you go. The next layer is the mushroom, enoki mushroom.
It comes in a bundle and I ripped into like this bite-sized pieces like this and then you can
adjust, arrange them like that evenly in the pot. Next is the glass noodle that goes on.
You can put two bundles as well because if you like a lot of noodles, you can put two bundles.
Each bundle is 50 grams. Next, we are going to position the shrimp. They're cleaned, trimmed,
and deveined. And what I did since I have the shell and a head on, I cut the back completely open
so this way the sauce can get in there but still without overcooking the shrimp because
the shell really keeps the shrimp moist. And once it's done, it's gonna look like a big red wheel
and the red color is also what we're going after. Chinese believe in
that's the rolling part.
And this dish really symbolizes that.
It's gonna be a very pretty dish. Very prosperous and is that the fortune just rolling in
how's that there you go doesn't it look like a wheel so at this point if you were to prepare
this ahead of time you put a cover on it you put in your refrigerator and just you know that's the
prep work you're done with this now what's gonna happen is that I need to go heat up some oil
heat three tablespoon of oil in the wok I decide to use the wok because I always use the wok for
cooking anyway so I don't have to wash another pot just gonna heat it until it's slightly smoke
and then I'm gonna scoop over the garlic and the chili smoking lightly I'm just gonna carefully
drizzle the garlic
and the reason you sizzle the garlic is so that it doesn't have that raw bite and it also gets
the aroma out okay so I need light soy sauce I need Shaoxing wine okay and the oyster sauce
okay at this point you can just mix
and the sugar
that's gonna flavor the whole thing yes we need half a cup of water
right so it has some more moisture okay and then I'm gonna scoop
evenly
there's a lot of garlic here there's a whole bulb of garlic here
go ahead of garlic
so distribute them evenly
they look pretty
the scallion goes on last okay here we go
like that and then we're just gonna cover the lid
okay turn on the heat set the timer if you have small and headless shrimp it's probably
you're good at 12 minutes I cook mine for 15 minutes and those are large shrimp it's time
whoa I don't know why the shrimp kind of like
bunched together the wheel collapsed a little okay now just sprinkle it with scallion
and it's ready to be served
I'm gonna fix the wheel a little bit the shrimps had a mind of their own so I'm gonna
make sure we got the
chai yuan guang gui
there you go fix it a little bit all right they're rolling again
happy new year everybody serve it for your Chinese new year gathering
