Fresh Green Bean and Tomato Salad with mouth watering dressing, Healthy and Easy Side Dish for a weeknight meal.
#salad
Hi guys, today I'm making green bean and tomato salad.
All the ingredients and measurements are right below the video in the description section.
This is one pound of green beans that I've washed and drained, ripe tomatoes, red onion,
flat leaf parsley, and basil leaves. You can definitely substitute dried herbs if you don't
have fresh ones. Dried oregano is also a great addition to the salad. For the dressing, I'm
using extra virgin olive oil, apple cider vinegar, prepared mustard, garlic powder, salt,
ground black pepper, and a little bit of sugar to balance the vinegar. Whisk it all up,
taste it, and add more salt or sugar if you need to. That's it for the simple dressing.
Slice the red onion thinly, cut them in half. I like to leave the onions in the dressing
while preparing the other ingredients. This way they have a chance to marinate
and lose some of the sharpness. For the tomatoes, remove the core and cut them into bite-sized
pieces. Stack up the beans and trim the ends. These beans aren't too big so they don't really
need to be cut in half. If your beans are really long, be sure to cut them in half,
otherwise it's kind of messy when you eat it. Put a large pot of water to boil to cook the green beans.
The water's come to a boil. We'll add some salt and the beans. Give it a stir and let it cook for
about five minutes until tender. Five minutes are up. I'm going to turn the heat off and drain the
beans. Leave the beans to cool. After draining the beans, if you want to keep that bright green color,
you can put the beans directly into ice cold water. While the beans are cooling, you can chop
up the parsley and tear up the basil. Leave this to the end so the herbs don't darken. The
beans have cooled down. Add the tomatoes, parsley, tear up some basil leaves, and the dressing with
the onions. Get every bit of that yummy dressing. Give it a taste and adjust the seasonings if you
need to. I'm going to add a little bit more salt. The salad can be eaten right away or you can put
it in the fridge for a few hours. This is the perfect amount of dressing, the right ratio of
tomatoes, onion, and green beans. This is such a healthy and easy salad to make as a side dish with
any meal. I hope you give it a try and let me know what you think. Subscribe and I'll see you next time.
Thanks for watching.
