🍰 Ingredients:

For the Coconut base:
Desiccated coconut 200g (2 cups)
Hot Water 1/2 cup (120ml)

For the Caramel syrup:
Sugar 200g (1 cup)
Water 120ml (1/2 cup)

Fruit base:
Dried Fruits and Nuts 1.3 Kg (about 7 cups)

I used:
Dates (pitted and chopped) 400g (about 2 ⅓ cups)
Dried Sultana, Raisins, Cranberries mix 300g (about 2 cups)
Cashew nuts 150g (about 1 cup)
Dried Apricots 100g (½ cup)
Mixed glazed Cherries 200g (1 cup)
Candies melon 200g (1 cup) Optional
Ginger freshly grated 2 tablespoons
Candied peels 50g (1/4 cup)
Brandy 3 tablespoons
Spices 2 tablespoons
(Cinnamon powder, Allspice powder, Cardamom powder)
Jam/ Jelly 2-3 tablespoons
Vanilla Extract 2 teaspoons
Almond essence 1 teaspoon

Finally,
4 Eggs
Melted Butter 150g (⅔ cup)
Plain flour 200g (1 ⅓ cups)
Baking powder 1 1/2 teaspoons
Baking soda 1/2 teaspoon

Measuring cup size - 240ml
Baking pan 22x22 square
Serving size 10-12 persons

Bake in a preheated Oven at 160c (320f) for 1 ¼ - 1 ½ hours. Cover the top with a foil paper halfway through baking.
