The harvesting season for black truffles typically runs from December to March of the following year (in Europe's harvesting period). Truffles with a mild flavor can be harvested throughout the year, growing in alkaline soil under the roots of trees in hilly areas. Once harvested, they can be stored at 3-6 degrees Celsius for up to a week, but it's best to consume them as soon as possible.
To find truffles, one looks for a Trifolao (truffle hunter). They go out with their dogs, which are specially trained from a young age to detect the scent of truffles and locate where they grow.
