Fried Rice Cakes with Smoked Salmon

Life can get really busy and I'm always looking for those little shortcuts in the kitchen and
that's why I love using microwave rice because it's pre-done, amazingly cooked already, all you've
got to do is heat it up. So what I've got here is a coconut chilli and lemongrass rice and we're
going to make some fried rice cakes and top it with some smoked salmon, a great little snack
or an appetizer. So we've got our rice here that I've just cooked in the microwave,
a couple of minutes, so nice and hot and that can go straight into our bowl. You can see all
the flavour, this is a basmati rice which is going to work really, really well for this dish. Then
we've got some flour, just a tablespoon of plain flour, just to help bind everything together.
One egg that I'm just going to crack into our little bowl here and just give a little whisk
with our fork and then that can go on top of the rice. Then I'm going to add some ghee or clarified
butter, again just as a binding agent and we're also going to fry our rice cakes in some ghee
as well. I'll grab a spoon and we'll give this a little mix around till it's starting to come
together. I'm going to form these into some rice cakes now and fry them for a couple of minutes
either side in a medium frying pan with a bit of ghee in there and then we'll start topping it
with some smoked salmon and some other goodness. The rice cakes look great, they've held together
well, nice and golden brown and crispy. We'll get these onto our plate, we'll serve up three.
But these are a fun little appetizer idea, something different and then I've got a little
bit of Kewpie, Japanese mayo. Just want to do a little dollop on top of each rice cake, love this
stuff. Then we've got some beautiful smoked salmon. I adore smoked salmon like this and just make a
little foldy fold, like a nice petal of salmon sitting proudly on top. Have a look at that.
Just beautiful. Then I've got some pickled ginger, I love pickled ginger.
Get a little fork, you don't need much because it's quite strong.
Just for a bit of acidity, really cuts through that richness and fattiness
that you get from the salmon. Then I've got some black sesame seeds, love black sesame seeds, just a
sprinkle of those on top. They look great. And just to finish off, some fresh chives,
a couple of long strands on each one. Using that microwave rice, you can have fried rice
cakes with smoked salmon in just minutes. How good do they look? Give them a go.
