Ruben Santana is the owner and manager of Bark Barbecue, a Texas-style BBQ joint that popped up in New York with a Dominican twist. A Dominican native of Queens, Ruben smokes brisket, ribs and other meats in a classic Texas style, while adding a Dominican flair to condiments and sides, including arroz con gris, maduros, etc. Ruben, who previously worked in the auto and HVAC industries, founded Bark Barbecue in his backyard in 2020.
