Do you know how to make a delicious leek and bacon pie? Stephan in this video will help you with his great and easy recipe that really resembles a Canadian pie and would be perfect for the occasion of a Canadian or American Thanksgiving.

The recipe of the day is called a Tourte (pie) and it's filled with slow cooked leeks, cream and bacon.

A delicious homemade shortcrust pie casing, filled with a blend of creamy slow cooked leeks and chunks of farmhouse bacon. This creamy filling is then lightly seasoned with some cayenne pepper and nutmeg which add some personality to the dish. You will need a good quality pie dish (Tourtiere) for best results.

🥗 Ingredients
For the shortcrust pastry
- 250 grams of plain flour
- an egg yolk
- 50 ml of water
- 125 grams of butter
(When done, cover in plastic wrap or a cloth and let it rest in the fridge for at least 2 hours.
Once the dough has rested and you want to use it, take it out of the fridge and let it sit at room temperature for an hour or so which will make it easier to lay out using you rolling pin).
For the pie filling
- 100 grams (3 1/2 ounces) leek
- 100 grams (3 1/2 ounces) raw bacon
- 1 medium onion
- 200 grams (7 ounces) puff pastry
- Pepper (to taste)
- 50 ml (1/4 cup) olive oil
🍣 Directions
Prepare the pie filling:
1. Cut the leek into slices and the bacon in pieces.
2. Place the olive oil, chopped onion and the bacon in a pan and saute over low heat until the onion starts to turn slightly golden. Add the leek and cook for about 5 minutes, stirring occasionally. Add milk, flour, salt, nutmeg and cook in low heat for 30 minutes. Stir everything well.
3. Preheat the oven to 180ºC (350ºF). Grease a pie pan (24 centimeters (9 1/2 inches) with some butter, line with the pastry and prick the bottom with a fork.
4. Meanwhile, whisk the pie filling
5. Place the bacon and leek mixture over the pie and drizzle with the béchamel mixture. Sprinkle with grated cheese and bake until slightly golden, about 25 minutes.
6. Turn off the oven and serve.
