In this video, you watch Justine cook an appetizing chicken over hot coals with her easiest lemon chicken recipe. Using only seasonal ingredients, she made the dish so attractive. This traditional homestyle lemon chicken recipe is plausible to the Missouri region in 1820, using ingredients that were known to be available in the area.
In this recipe of lemon chicken, I never have exactly measures for the ingredients, just a pinch and a dash…. It also tastes really good when you eat it with rice.

Ingredients:

- 1 full grown chicken, or 2 Cornish hens
- Butter
- Thyme
- Parsley
- Rosemary
- 2 lemons
- Onion
- Salt & pepper
- Cayanne pepper
- Granulated garlic
- Small potatoes

How to cook:

1. Place lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper in a large, non-reactive bowl, whisk to combine.
2. Now dice an onion or garlic into big chucks and stuff this into the cavity of a (non frozen) chicken.
3. Rub the outside of the chicken with your spiced butter mixture including under the skin where possible.
4. Place into a dutch oven or deep cast iron skillet.
5. Dice up some washed potatoes and mix with salt, pepper and more diced rosemary and thyme.
6. Press these around your chicken.
7. Place 3 lemon slices on top of the seasoned chicken.
8. Put a small dash of water into the pot then cover and bake in a 375 degree F oven for 1 hour.
9. Enjoy!
