I resisted for many, many years. Why? Because I love New York and I did not want to open a
restaurant because then it's all work and no play. We are in New York now for six weeks,
so we just opened. We are still brand new, you know. The hotel is brand new. It's a new
four-season hotel. We have these rich velvety chairs and really a very comfortable feeling here.
My wife is an art curator and she loves art and I do too. Like here on the wall,
you can see Julie Meheritu, an artist right here from New York. Behind us,
the two big paintings, is a new emerging artist, Alex Israel. The little nail sign,
maybe some people say, oh what is that? It's called Move Me. It's from Tracy Emmons. She's
a famous English artist. We have an amazing crew in the kitchen.
We really have exciting appetizers, great side dishes and dessert.
We are tweaking, I'm tweaking the menu, changing certain things. There's always new things coming
along. I always tell them we have to change and not keep the same thing all the time. So
restaurants are like an evolution. If we serve the same thing all the time, people get bored,
especially the younger people. Each restaurant for me should fit in where it is. It should have
a sense of place. So this one, I think it feels like a downtown restaurant. You know, it's cozy,
sexy, yet chic also, not complicated. Tables are a little lower, the chairs are a little bit lower,
so you feel almost like a little loungy feel. Mostly what is exciting downtown,
there are so many young people who go out all the time. They might come to the bar,
they can sit there, have a cocktail, order some small dishes. New York is
really the center of the world. So finally, we are here.
