Now I'm going to show you how to make one of my favorite desserts.
It's called Kaiserschmarrn.
It's an Austrian dessert.
I used to have it when I was a kid.
My mother used to make it for me.
And now it has become a huge success in all of our restaurants.
It is really a little bit like a souffle,
but very delicate, perfect for the end of the meal.
So I'm going to show you how to make it.
It's very simple.
So what we're going to do is use some creme fraiche,
a little touch of yogurt,
or a little farmer's cheese,
egg yolks,
sugar.
I have some raisins, and I'm going to soak them in rum.
And now I'm going to mix that really well together.
Really simple.
So it's like a souffle pancake.
I mean, you could do that at home,
but if you come to Spago, you get it really easy.
Now I'm going to add a little flour.
I'm going to add some of my raisins to it.
And a little bit of the rum.
All right, so now we have that ready.
So we could cook it like that,
but it would be very heavy.
So now I have some egg whites here.
Now I'm going to add a little cream of tartar.
And now we're going to add a little sugar.
So it's important that the egg whites are nice and stiff,
but not over whipped.
You see that?
So we call that a soft peak.
I'm going to fold them into our egg and flour mixture here.
We always use a little bit first.
All right, gently fold it in.
And then we're going to add the rest to it.
So now we fold it in nice and gently.
So that's done.
Now, if you do that at home,
you can prepare it a little bit ahead of time
and keep it refrigerated.
Mmm, pretty good.
We're going to bake it now.
You can use any kind of saute pan.
You butter it and put a little sugar in here.
So that's it. So simple.
All right, so we put it in our saute pan.
It takes about 12 to 15 minutes
to bake it in a 375 degree oven.
So really simple and easy.
While our Kaiserschmarrn is baking,
I'm going to make a little sauce
with strawberries and raspberries.
To go with it.
Okay, I'm going to put it in the oven.
So now, I have a little raspberry puree here.
Or it could be strawberries or blackberries.
Whatever you like.
And just before serving,
I'm going to heat up the strawberries right in here.
That's it. Enough.
So we don't have to cook it too much.
So the Kaiserschmarrn is ready.
Now, we're going to put the strawberries on our plate here.
If you want to share dessert like that,
it's perfect for the table.
And now we're going to scoop it out.
Look at that.
Perfect.
Now, a little powdered sugar.
And here it is.
One of my favorite desserts.
The Kaiserschmarrn.
This is my childhood favorite.
I could still eat it every day.
