Hi guys and welcome to this A Lot On Her Plate Independence Day special. I'm super excited
because I'm here in London's Hyde Park in the 45 Park Lane Hotel at Cut and I'm about
to meet one of my all time food heroes, Wolfgang Puck, who's downstairs in the kitchen and
he's about to show us how to make the most amazing all American breakfast style pancakes
just in time for the 4th of July.
Absolutely, I think everybody loves some good pancakes for breakfast. It's really easy to
make. I know my kids wake up early in the morning and they want pancakes. Some like
it plain, some like it with blueberries, some like it with chocolate. You can make it the
way you want it. So it's really easy to make it.
So this is for our Independence Day special. Is this something you'd have on the 4th of
July to kick things off?
I think you need a good breakfast, something before you go out and barbecue and drink.
And you can make it a little Americana by adding some blueberries, maybe some strawberries
and a little whipped cream. So you have red, white and blue, the colours of our flag.
Very patriotic.
Yeah. Alright, now we're going to show you how easy it is actually to make it. We have
4 eggs here.
4 eggs going into the bowl.
Into the bowl. Then I have some milk, a little cream, make it a little richer and you know,
we call them buttermilk pancakes so we're going to add buttermilk here.
Buttermilk.
Buttermilk is good because it has some acidity in it so it's really delicious.
And if people are struggling to get hold of buttermilk, is there something they could
use instead?
Regular milk is fine.
Okay.
Yeah, or you can add a little touch of sour cream to it or creme fraiche a little bit.
Yeah, great. And do you have to put quite a lot of movement into this at this stage?
Ah, you have to have a good wrist, yeah. Or if you have a mixer, an electric mixer, it's
fine too. But we make it by hand so it's really easy. So that's nice and smooth here. Then
we're going to add some baking powder, a little bit of baking soda. All right, so now we're
going to add a little salt because without salt it wouldn't taste right, you know, so
you have sweet and it always needs for the balance a little salt.
And then we're going to add sugar and then we need a little spice. So I'm going to add
a little touch of vanilla. All right, enough. And a teaspoon of ginger. Okay, I like ginger
so I add a little more.
And a little nutmeg. I like a little less nutmeg so I add a little less. So it really
depends on you how you like it. If you want it really gingery or really cinnamony or really
nutmeggy so you add more or less. Here we have a fresh nutmeg. We're going to grind
a little bit. I just use a little nutmeg. Okay.
Fantastic. It's smelling really good already.
You can smell it. You know, it's so much better when you use it fresh. You can also get it
already ground, but fresh nutmeg is really delicious.
And do you remember the first time you had breakfast pancakes in America?
You know what? We have a restaurant chain called the International House of Pancakes.
Wow.
They are specialized in pancakes with all different varieties, but I remember that was
the first time in Indianapolis. I stopped at the International House of Pancakes and
it was after I went to a nightclub, after I went to a discotheque.
The morning after.
All night, yeah. So it was like at four or five in the morning.
Oh, wow.
So now we're going to add butter. Here I have some melted butter.
Melted butter.
And then we're going to add the flour. So now that I have the butter in here, the flour
doesn't want to make clumps. So we add the flour.
And that's quite a lot of flour going in there.
Yeah, but this is a recipe enough for a big family.
Okay, right.
Or you eat it.
This is going to make a big stack of pancakes.
You're very famous for cooking in Hollywood and you've cooked for many stars. Are there
any of your clients who have a particular penchant for pancakes?
Well, you know when JC and his wife, Beyonce, stay at the Bel Air Hotel, they love our pancakes.
Okay, fantastic.
So they have breakfast, they stay in the big suite and they always start with pancakes
in the morning and with their kids too. Now you can see, now you have a nice smooth batter
here. You don't want any lumps in here. If you have lumps in here, strain it through
a china cup.
The one thing that's good, you can make the batter the night before and put it in the
refrigerator. So that way it's actually better because the baking powder and baking soda
make it rise better.
Oh really? Oh, that's a good tip.
Yeah.
So is that the key then to really great pancakes, is giving it some time to let those...
Absolutely. I think because if you add baking powder, baking soda, it takes a little time
to activate it. So that way it rises much nicer and much better. So you have fluffier
pancakes. Then in the morning you take it out and let it come to room temperature because
of the batter in here, it will get very thick.
Right, okay. So it's got to come back up to room temperature before you cook it.
We're going to make our pancakes, you know. So you decide if you want them plain, with
chocolate or with blueberries. So that's up to you.
How do you like them Wolfgang?
I generally eat them plain, but my son Oliver loves chocolate, so I always have to make
chocolate pancakes with chocolate chips. So we have them right here. At home, you can
see we have a griddle here, so we cook them on a griddle. At home you cook them in a non-stick
pan and so that way you don't have no problems to turn them over.
Now we're going to put a little butter on our griddle, make sure it's nice and hot.
It's also good because it gives good flavor.
And then we're going to scoop our pancakes right on here. So you can make them the size
you like, just make them about all the same size, it makes it easier. But, if you decide,
you know what, I want a big pancake, you can make a double-sized one, so really a giant
one. So now you can add what you like. Let's say you want a blueberry pancake, we add a
few blueberries on it. And then you can add a little chocolate, if you like chocolate.
I like really good bittersweet chocolate, so that way it doesn't get too sweet.
So the most important thing is that they cook not too hot, because you want them perfectly
cooked. So if you cook them too fast, they get doughy inside. So you have to have medium
heat, not too hot. Okay, so let's look underneath our pancakes, if they are starting to brown
a little bit. You know, I like my pancakes really nice and brown, because that way it
has a better flavor. If you have pancakes where it's all yellow, it tastes generally
doughy and floury. So anything, whatever I bake, I cook, I try to get it really, really
dark in color. Oh, that's a lot of chocolate. A lot of chocolate. Expertly done. See, just
a little flip of your hand. Alright, you line them up halfway on this one. Good job. Alright.
They look so good. And then we have the two monster pancakes. Make sure the other side
is nice and brown. You can see the chocolate here. Wow, look at that chocolate. It's very
hot. Alright, and one with blueberries. See here, caramelized blueberries. Alright, let's
finish our pancakes here. You can see they're all really nice and brown. So if you like
them plain, or if you want a few berries on it. Now, what I like though, it's a little
syrup, not too much. Is that maple syrup? That's maple syrup. Look at that, that looks
fantastic. And then, if you want, a little touch of powdered sugar. Just to finish it
off. Wow. Alright, here we have Fourth of July will start really happy, you know, with
a happy stomach. We are done now, we have to taste them. The proof is in the pudding
as they say in London. Definitely, let's tuck in. Yep. No, let's tuck in when we go to bed.
Let's dig in. Let's dig in. Alright, so now, Rosie, you have to taste them. You can see
the texture, it's nice and fluffy. Wow. You want a little more syrup on it here? I can
see you're a syrupy girl. I'm so excited. Alright, here. Oh wow, you can really taste
the ginger. And the blueberry. Yeah, and the blueberry, which has gone all kind of melty
and... Yeah, it's like a blueberry jam inside, you know, because it cooked them. That's delicious.
They're so good. Even I'm hungry, so look at that. They're so good. I'll still eat my
own food, it's not bad. Well, Wolfgang, thank you so much for showing us your recipe for
brilliant breakfast pancakes. I'm definitely going to be making these at home. I hope you
guys are as well. Hope you've enjoyed the video. If you have, please subscribe and we'll
see you next time. See you next time. Mmm. Almost as good as Seth's.
