This isn't beef. It costs less than a dollar per steak and it's made entirely from white beans.
After testing two different cooking methods I finally found the secret to an incredibly
meaty texture. Here is exactly how I make them. Let's do this. Dice one medium onion.
Saute it in a little oil for eight to ten minutes until golden and caramelized.
Peel and mince two garlic cloves and set them aside. Add 90 grams or one cup of rolled oats
to a food processor and blend until they turn into a fine flour. Now add 480 grams or two cans
of well-drained white beans. Add two teaspoons of smoked paprika, half a teaspoon of ground coriander,
half to three quarter teaspoon of salt and one teaspoon of black pepper. Add four teaspoons of
psyllium husk powder. Then add two tablespoons of soy sauce, a quarter teaspoon of liquid smoke.
Add the minced garlic to the skillet. Then stir in two tablespoons of tomato paste and cook for
another 30 to 60 seconds to deepen the flavor. Add the onion mixture to the food processor.
Blend until mostly smooth. Let the mixture rest for 10 minutes so the psyllium husk can absorb
the moisture. If it still feels too soft, transfer to the freezer for about 10 to 15 minutes to firm up.
Meanwhile make the marinade. Whisk together one tablespoon of tomato paste, two tablespoons of
soy sauce, a quarter teaspoon of liquid smoke and two to three tablespoons of water. Shape the
mixture into four medium-sized steaks. Steam them for 10 to 12 minutes. Don't skip this step. It
completely transforms the texture and makes the steak so much firmer and meatier. Meanwhile
I pan-fried two steaks without steaming them first to compare the texture. I brushed them
with the marinade from both sides and cooked them for about three minutes per side. Back to
the steamed vegan steaks. Let them cool for at least 10 to 15 minutes. If you have more time,
chilling them even longer will make them even firmer. Brush them generously with the marinade.
Heat a little oil in a skillet and cook the plant-based steaks for about three minutes per side
until they are beautifully golden brown. During the last minute add two sprigs of fresh rosemary
to the skillet. I served them over creamy mashed potatoes and they were honestly incredible.
They are golden and crispy on the outside, tender and juicy on the inside and if nobody told you
they were made from white beans you would probably never guess. So here you can see the white bean
steak. It turned out really amazing. It smells amazing and you certainly shouldn't skip the step
of steaming because this really improves the texture and I can't wait to give it a try.
So so yummy. I really love the texture. It's so meaty and not crumbly at all. I really hope you
will try it. The step of and you certainly shouldn't
