I had a friend text me a picture of him holding a very big Beautiful Brook Trout. He clued me in to which lake he was at and I couldn't help but start making plans for a high mountain canoe camping trip. I had been to this lake before so I knew what to expect when it came to getting there. An extremely steep, rocky-rough road, which is OK with me since it keeps the place from being so crowded. Oh, He warned me that the fish were difficult to catch, and that he had had been skunked on multiple occasions. Lol! I'm familiar with getting skunked, and quite honestly I'm OK with it since I had been dreaming of how I might cook a nice tenderloin steak I had recently picked up. I landed on trying to Sous Vide it but rather than putting it in a plastic bag, I would bathe it in beef tallow! That seemed like an original take on the many ways, you can cook a steak and sounded very delicious to me! Beef cooked and browned in beef fat! Sounds perfect and honestly, it tasted even better than I had imagined!

A solo camper travels by canoe to a scenic lake with his dogs to fish and experiment with a unique cooking method. Despite failing to catch any fish and battling a swarm of mosquitoes, he successfully prepares a beef tenderloin using a makeshift sous vide technique with beef tallow.
I think we can find a place to camp right here in these woods.
Just got to find a good place to go ashore.
Let's see if we can find a place to camp.
Oh yeah, looks like there's going to be lots of spots.
Pretty darn nice. I think that the fishing is best in this area here ahead of us.
Yeah, it starts getting pretty rocky over here.
I don't want to carry my stuff this far either.
Although this looks pretty nice.
I decided to move the canoe around the corner.
Put it a little bit closer to the spot that I decided I wanted to camp in.
So, just let the dogs follow me on shore.
Good growers.
Yeah, this little cove right here I think is where most of the fish are.
Now this lake...
Good girl, I saw you swimming.
That's the best I've seen her swim.
Finally figured it out.
Now she's trying to get in front of the canoe.
Yeah, good girl.
Anyway, the fish here in this lake are really big.
But they're really hard.
So, I don't know if I'll be able to get one or not, but I'm going to try.
Good girl, Maggie.
Good girl.
No, you can't get in.
They're just swimming around me.
What you doing, Urs?
Come here. Can you make it?
That's the best I've seen her swim yet.
Usually she's kind of putting her paws up high.
She's got it figured out.
Alright, there's a little spot right in front of us.
She's planning on parking.
There are a few mosquitoes out, I'm noticing.
A lot more rocks over here, but I think I can be careful.
Not scrape up the boat too much.
Camp is set up.
That's about as complicated as it's going to be.
At least until I need to cook.
I've got my rod and reel set up with a black marabou jig.
My standard standby.
My go-to.
So I'll throw it a few times.
And if I don't catch any fish, I'll start trying some other things.
But I think the inlet to the lake is this direction.
So I'm just going to walk this way.
And I think I'm going to try to fish directly from the inlet.
Yeah, this is a nice spot right here.
Look at that, this little cove.
It's going to be my main fishing spot.
We made it to the inlet.
And it's really pretty.
It's almost like a little waterfall.
Let's see if I can get a little closer.
Yeah, that's awesome.
Very pretty little spot.
Bunch of trees that have died right there in that one spot.
That's kind of how I thought it would go.
I don't think this will be very fast fishing.
Honestly, I think I'm going to be lucky if I can catch one.
But if I can catch one, it should be pretty nice.
Oh, Arsa, what are you doing?
Just trying to get back up on it.
There you go, almost.
I have not had any luck when it comes to fishing.
And I've tried everything I have.
Not even a bite.
Nothing.
Anyway, I thought I'd hike up here and see where this inlet comes from.
I don't know if there's a spring up here.
Or if this is a creek that runs from further up on the mountain.
This is it here in front of us.
And at this point, it's a stream.
Oh wow, this is beautiful.
It looks like it comes from up further on the mountain.
Maybe even from the mountaintop.
The mountaintop is just right there.
There's some cliffs.
And then the top of the mountain is there.
We're just on this bench just below the top.
I'm going to be doing some...
Go lay down.
No, not right here.
I've got to work right here.
Can you go somewhere else?
There's lots of mosquitoes, huh?
You want me to swish them away for you?
Is that why you're laying here?
I'm going to be trying something completely different today.
I have some beef tallow.
And I have the box pot.
And I have the fryer basket for the box pot.
So I have a 10 ounce tenderloin beefsteak.
I've got green beans.
And I've got potatoes.
I realized about halfway here that I forgot my side burner brackets.
I'm going to set up the gas burner fairly low in the firebox.
That'll just kind of protect the flame from the wind.
Get the box pot out.
We'll add our beautiful beef tallow.
Try not to spill any of it.
The dogs are instantly interested.
No, Arson.
That's a full two cups of beef tallow.
I was hoping that I could get this beef tallow to regulate at about 130 degrees.
But it's already way over that.
It's like 170 probably.
I don't know if I waited for it to keep going up.
It's quite high.
So what I'm going to do is I'm going to raise the box pot up to this next level up.
And just see.
Because I've already got the burner turned down as far as it'll go.
If I turn it down any lower it's going to turn off.
So let's just see what happens if I run it up here.
Because if I can get that to regulate at about 130 degrees.
Then I can sous vide my tenderloin.
I've got the box pot fryer basket here.
I just need to put the handle on.
Just like that.
And let's see what this temperature has regulated at.
I've got it quite a ways away from the burner now.
Looks like it might be just about right.
It's a little higher than 130.
But not by much.
So that might be perfect.
Let's try it.
I've got my beautiful 10 ounce filet mignon tenderloin beef steak.
Let's go ahead and put it in.
And it is completely immersed.
So I think I could even put the lid on.
I'm just going to set a timer for a half hour.
And I'm going to come back and check on it.
So the dogs won't be so jealous of what I'm cooking.
I have some steak for them as well.
So.
Come on Maggie.
Okay.
Since this has so much thermal mass.
I'm going to pull it off the heat.
Let's just turn it.
I've been rotating it and turning it.
About every 10 minutes.
And the oil hasn't been at 130 degrees.
That would just take way too long.
It's actually at about 160 degrees right now.
So it's a little high.
So it's a good time to go ahead and just take it off for a second.
Get my beans cooked.
So you can see the position that I put the fire sticks in.
And I'm going to go ahead and turn it up a little bit.
We'll just get this water boiling real fast.
Let's see how this is working as far as keeping my beef tallow hot.
I've got the boiling water below it.
Maintaining 135.
Somewhere in there.
Close enough for now.
Let's check our beans.
See how they're doing.
I can tell they need some more time.
So I just checked the internal temperature of my steak.
And it came up as like 135 to 140.
So way higher than I was expecting.
It was moving so slowly.
That I thought this was going to take hours.
And then suddenly it's just at temperature.
So it's a little bit more tricky than you might think.
As soon as these beans are done.
I'm going to bring my oil temperature up hot enough.
That I can brown my steak.
I'm letting it cool down now.
Letting it rest.
And then I'll go ahead and throw it in some hot oil.
And brown it.
Mmm.
Those beans are done.
Let's turn this oil on.
And let it get good and hot.
Potatoes.
Okay.
I'm going to let those rest.
Alright. I hope that oil is hot enough.
To brown my filet mignon.
Let's give it a try.
Oh yeah. It's getting brown.
Alright. I don't want to overcook it.
So I'm going to stop.
I'm going to turn my gas down.
My plate on.
Just a little bit.
It's nice and hot.
Alright. Let's put some butter on there.
Butter was cold.
A little bit of salt.
A little bit of pepper.
Alright. Let's cut this steak and just see how we did.
Like I said, I think the internal temperature got a little higher than what I was hoping for.
It just kind of got away from me.
I was watching it pretty closely too.
So let's see what happens when we cut this steak.
I really don't know what to expect.
I hope it's not just gray.
Oh. It's not very pink.
Guys. Yeah.
I got it a little bit too hot.
Good thing it's filet mignon.
This filet is so tender.
I could probably just cut it with this fork.
A little bit of potatoes with my filet.
Mmm. Wow.
That filet is good.
It is very delicious and that is one heck of a meal.
Look at that.
Yeah.
Man. That is so good.
That is very delicious.
Mmm.
I'm going to go find somewhere down in the rocks where there won't be this many mosquitoes.
More salt.
A little more pepper.
Huh.
Oui, oui. Magnifique.
I don't know if it could get any better than this.
Mmm.
Mmm. Mmm. Mmm.
As lame as this is, I'm bailing.
These mosquitoes are just too thick.
The dogs are going crazy.
I'm going crazy and it's still a while before it gets cold enough that they're going to go away.
If it even gets cold enough tonight.
I have loaded up the canoe.
I've just grabbed everything and threw it in bags and we're going to make a run for it.
So, thank you for watching everybody.
We'll see you in the next one.
Bye-bye.
