A Rainy Autumn Day in England 🍂 A Village Walk & Comfort Food at Home

Hello friends, and a warm welcome to our home in Hampshire, England. 🍂
In this silent autumn vlog, I’m making homemade hand cream for the colder months and baking traditional soul cakes with my son, Alex. Between the showers, we head out for a village walk in the English countryside before coming home to a comforting chicken and apple supper.
There’s something lovely about these ordinary days, with time to make things, get outdoors and gather around the table. I hope you’ll feel at home here and enjoy spending a little of your day with us.

HOMEMADE HAND CREAM
45 g shea butter
45 g cacao butter
45 g sweet almond oil (or coconut oil)
2 tsp cornflour (or arrowroot powder)
Optional essential oils: cedarwood, frankincense and sandalwood — I added a few drops

SOUL CAKES
300 g plain flour
150 g butter — I used organic plant-based butter
150 g caster sugar — I used 90 g granulated stevia sweetener; check your brand’s sugar conversion
2 tsp ground allspice
A little freshly grated nutmeg
1 tbsp oats
1 egg, or 2 egg yolks
2 tbsp oat milk
½ tsp apple cider vinegar
Raisins or currants — approximately 80 g if using them throughout the whole batch, plus a few for decorating
Dairy-free chocolate chips for the pumpkin-shaped cakes, instead of dried fruit

CHICKEN WITH APPLES & RED ONIONS
8 boneless, skinless chicken thighs
3 medium apples, such as Gala, Fuji or Braeburn
2 red onions
1 garlic clove
1–2 tbsp olive oil, plus approximately 1 tbsp extra for the chicken
40 g butter, plus 1 tsp extra — I used plant-based butter
200 ml chicken stock
2 tsp brown sugar or muscovado
4 tbsp oat cream
1 tsp cornflour, mixed with a little cold water
1 tsp apple cider vinegar
Sea salt and freshly ground black pepper

To serve: rice and buttered leeks.
