Now let's get started. We are going to
need buttermilk, warm water, sugar,
plain white flour, sour cream, eggs and fresh
blueberries. Using a whisk attachment we're going to add eggs,
buttermilk, warm
water and sour cream in the bowl.
We're going to whisk this for a couple of
minutes until it's all combined. Then we're going to change our whisk
attachment to the dough hook.
Slowly add your sifted flour with salt and mix well.
Keep adding flour one cup at a time
and make sure you get all the sides. Knead
your dough for a good five to ten minutes.
You can always test the dough if
it seems like it's still wet.
Keep adding a few tablespoons of flour at a time and
mixing until it comes together.
Add your dough onto the floured surface and knead
the dough for another 5 to 10 minutes by hand.
Add more flour and then wrap your dough into
cling film and place it into the fridge to rest for half an hour.
Add blueberries into a bowl
and then add sugar and set it aside.
Take a large piece of your dough, we're going to roll out one
piece at a time because it does dry out.
Constantly keep adding flour on top and underneath the dough
roll it out into a nice square.
Take a cookie cutter and make the same shapes
all around the dough.
Add about three blueberries into each dough and then
fold it around and make sure it's all sealed from all the edges.
Then take a
fork and press around the vareniki to create a nice beautiful pattern.
Boil your vareniki in salted water for 7
to 12 minutes until they start to float.
once they're floating that means they're done.
Serve your blueberry vareniki with
some blueberry jam and enjoy!
